Mmmmmmmm speechless I am after trying this. How can he be so extremely rich? You are right. They are spaghetti inspired by the style matrician  to which we have given a special touch by adding to the sauce some piquillo peppers that combines phenomenal with the dice of grilled eggplant that we have prepared.

La ketchup, in all its variants, with thermomix it comes out really spectacular. Do not stop preparing your own fried tomato or tomato sauce for meat, fish, rice and pasta. Its flavor, its texture and its great quality will make it unmatched.

Exquisite spaghetti with tomato sauce and piquillo peppers topped with grilled aubergine and oregano cubes. A perfect main course.

Ingredients

  • 350 g spaghetti
  • 1 liter of water
  • shawl
  • 800 gr of natural tomato or canned crushed tomato (if you use natural tomato, remove the skin and cut it into small pieces)
  • 50 gr of virgin olive oil
  • 1 medium eggplant
  • 8 piquillo peppers without seeds
  • 1 cebolla
  • 1 stalk of celery
  • 2 cloves of garlic
  • 1 cayenne
  • Salt and pepper to taste
  • oregano to taste

Preparation

  1. First of all, we are going to cook the pasta following the thermomix pasta cooking technique: pasta cooking technique with thermomix. We drain the pasta and reserve. (We do not need to wash the glass, it will be enough to pass a little kitchen paper over it to dry it).

  2. Cook the aubergine cubes on a grill with oil over high heat and a pinch of salt until they are golden brown. We booked.

  3. We pour the oil into the glass and add the onion in quarters, the garlic, the cayenne and the celery in pieces. We shred 10 seconds, speed 5.

  4. We lower the remains of the walls and the lid towards the blades and program 8 minutes, speed 1, varoma temperature.

  5. Add the tomato, the peppers, salt and pepper to taste and blend 10 seconds, speed 5.

  6. We program 15 minutes, speed 1, varoma temperature. In this step we will not place the cup, but we will put the basket in order to facilitate the evaporation of the water from the tomatoes and leave us with a thick sauce.

  7. We check the salt and pepper point and rectify if necessary.

  8. It is ready to serve: we place the pasta on the plate (which we will have kept warm or that we will have previously heated in the microwave) and add the sauce on top. We decorate with the pieces of aubergine that we had reserved. Ready to eat!
