Spaghetti with zucchini and tuna

For the days when you are in a hurry, here is a recipe for spaghetti different. No tomato, no carbonara... with some simple courgettes and a couple of cans of tuna.

My advice is that you use courgettes from organic farming because we are going to put them with skin. And that they are tender, the smaller, the better.

In this case we will cook the pasta in a saucepan while in the Thermo we prepare that fried zucchini, tuna, lemon... Don't you feel like using the saucepan? Well, once you have the sauce made, you take it out of the glass and reserve it. Then you can cook the pasta following these instructions: pasta cooking in Thermomix.

Neither with tomato nor carbonara. Today we will prepare some different spaghetti made with zucchini and tuna.

Ingredients

  • 30 g onion
  • 30 g of extra virgin olive oil
  • 1 garlic clove
  • 100 g of canned tuna (weight of tuna once drained)
  • Grated skin of 1/2 lemon (optional)
  • 20 g lemon juice
  • 240 g of zucchini with skin and cut into cubes (better if they are small and organic)
  • 1 pinch of salt
  • Freshly ground pepper
  • Water for cooking the spaghetti
  • 320 g spaghetti
  • Basil for garnish

Preparation

  1. We put the onion in the glass and program 5 seconds, speed 5. We lower with the spatula what has remained on the walls of the glass.

  2. Add the olive oil and the garlic clove. We program 3 minutes, 120º, speed 1.

  3. Add the zucchini, the tuna, the lemon juice, the grated skin (this is optional), salt and pepper. We program 10 minutes, 100º, left turn, speed 1. 

  4. Meanwhile, in a large saucepan, bring water to a boil. When it starts to boil, add a little salt and the spaghetti. We cook the time indicated by the manufacturer.

  5. Once cooked, drain the spaghetti and put them in a large bowl. We put on them the mixture of zucchini and tuna that we have prepared in the glass and mix carefully. We remove the garlic that we have added (it will have already done its function, which was to flavor it).

  6. Serve with some basil leaves and more ground pepper.
