Spinach cream béchamel

Spinach cream béchamel

I am very fond of this recipe because my mother-in-law made it a lot and when I tried it for the first time, I loved it! The name of spinach cream Maybe it is not very attractive, but I assure you that the flavor is spectacular. And the best part, the children will be delighted to eat it. Is light, nutritious and very simple to prepare.

You will see how this cream has a special touch that makes you can't stop eating. And that touch is given by the light béchamel that we are going to prepare based on olive oil (so that it is lighter than with butter) and semi-skimmed milk.

Do you put the spinach frozen or thaw it before?

    1.    Irene Arcas said

      Hello Mercedes, frozen straight 😉

  2.   sandra said

Hi there! What a delicious creampie ... I have to do it! ! The question that arises is about frozen spinach. I buy the mercadona ones that come in like two tacos. I imagine that these I will not be able to put them directly without defrosting since the same I charge something, right ???
Forgive the doubt but I have the thermo for very little.
    Thank you! !

    1.    Irene Arcas said

Hi Sandra, if they come in a block it is better to thaw them a bit at room temperature or in the microwave so that you can at least chop the block a little. If you put it inside, it would take a long time to do (don't worry, nothing would break, our machine is indestructible !!). Can you tell me how it turned out? A hug!! Oh and ask everything you need, that is how we have all learned 🙂

A very fine cream comes out, I reduced the amount of garlic by half, it is to repeat.

    1.    Irene Arcas said

Hello Sonia, you can try next time with the whole amount of garlic because when cooked it is super soft, you'll see! I'm so glad you liked it. A kiss and thanks for writing us 😉

  4.   True said

I made it as is, and we loved it. The touch of this cream, for my taste, is garlic. It is not very strong and gives it a special flavor. I will repeat it for sure. Thanks.

    1.    Irene Arcas said

How good Vero! Indeed garlic, being cooked is not strong at all. I'm glad that you liked it. Thanks for writing to us! A kiss 🙂

  5.   Manu said

Hello, I would love to try this recipe ... with the thermomix 21 is it the same? It is that sometimes the frozen products in my thermomix end up watering the result ...

  6.   Manu said

Well, and the temperature will go down to 90 or 100 I guess ...

    1.    Irene Arcas said

      Hello Manu,

I just put the table of equivalences for TM21 at the end of the recipe 🙂 Rest assured, because being a cream, frozen spinach will not alter the final result of the recipe. I hope you like it!

Can it be made with spinach without fresh…??

        1.    Irene Arcas said

Eve of course!! It will be delicious too 🙂 thanks for writing to us!

  7.   GEMMA said

First of all… ..congratulations on your blog! It is a pleasure to cook and have the help of people like you! Congratulations!
I wanted to ask if you have tried the recipe with fresh and previously boiled spinach. I like to buy fresh vegetables and if possible organic ... but I don't want that to distort, in this case, the result of this recipe.
    Greetings to everyone

    1.    Irene Arcas said

Thank you very much to you Gemma for following us and for preparing our recipes. You can make it with fresh spinach without problems. You do not need to boil them beforehand, as they will cook in the milk during cooking. If you already have them cooked, reduce the 20 minutes of cooking from point 3 to 10 minutes. Rest assured that the result of the recipe will not be distorted in the least. I hope you like it! You will tell me. A hug 🙂

  8.   Maribel said

    Hello Irene,
I also want to congratulate you on the blog, I am extremely hooked! And never before has cooking with my thermomix been so enriching and wanting to try new things with spectacular results, thank you very much!
My question is related to Gemma's, in the case of fresh spinach (from our urban garden ????) the quantity is the same, 300 grams?

    A big hug

    1.    Irene Arcas said

Hello Maribel, with 200-250 g of natural spinach you have enough 🙂

Thank you very much for your message, we are delighted that you like it and that you follow us daily. Without you this blog would be meaningless! So thank you really. A hug.

  9.   Lola said

Hello Irene I would like to know if I put half the ingredients I have to put less time thanks a greeting

    1.    Ascen Jimenez said

      Hello Lola,
I would not reduce the times too much. I would put a few seconds less in the first steps and then 15-16 minutes instead of 20.
We hope you like it 😉
      A hug!

  10.   Laura said

    Hello Irene,
The flavor is very very rich. I have made it with raw natural spinach directly and flour instead of cornstarch. The downside is that they have been very thick, like bechamel more than cream, too thick. I am wondering if I have the Thermomix scale damaged and the flour has weighed badly ... I have put the milk semi skimmed, 1 liter ... has it happened to someone?
    Thank you

    1.    Irene Arcas said

Perhaps the problem was using flour instead of cornstarch, which thickens more. However, you can add more milk or water to lighten it to your liking. Thanks for writing to us! A hug 🙂

    Hello,
I'm doing it now, I have the tm5. In my case, in step number 3 when it says speed 4 it is impossible, because it moves a lot and comes out, so we are in speed 3

    1.    Irene Arcas said

Hello Natividad, at the moment our recipes are designed for the TM31, so we appreciate very much that you have shared your adaptation to the TM5. Did you like the cream? I hope so 😉 A hug and thanks for writing to us.

of flavor yes, a lot but too liquid for my taste. Thanks

      2.    Eva said

The same thing happened to me, in speed 4 the machine moves a lot and the milk comes out.

        1.    Irene Arcas said

Hello Eva, try reducing it to speed 3 and grinding once the 20 min of cooking is finished. Thanks for writing to us!

    2.    Gonzalo said

      Hello Natividad,
The same thing happened to me (number 3 when it says speed 4 is impossible) with flour and natural spinach.
What you have to do is hold it tight by pressing down and put speed 7, after 5/10 seconds nothing moves anymore and you can leave it at speed 7 quietly if you want it very liquid or lower as you want.
      A greeting.

  13.   Alba said

And for those of us who do not have a thermomix? ??

    1.    Irene Arcas said

Hello Alba, very simple. First you make a bechamel and then you add the rest of the ingredients. You stir well so that it does not stick to the bottom. Let it cook for 20 minutes and blend with a blender. All the best.

They just told us that my 5-year-old son is a bit allergic to milk and eggs so they have temporarily taken it away and we have to adapt. I would like to know if it will be good if I change the milk for broth and if it would be the same amount

    1.    Irene Arcas said

Hello Ana, it will be very good also substituting it for the same amount of vegetable or chicken broth, but you can also use soy or almond milk, it sure is delicious !! By the way, we invite you to visit our intolerances sections in case you find any interesting ideas to prepare your child.

I think the same, for the tm5 speed 4 is excessive. I am preparing the recipe right now, I have corrected this step at speed 3.

  16.   Miguel said

The recipe has numerous flaws. Starting with the "frozen" business. The machine used to give boats and now it asks for a sharpening of blades. A liter of milk? The thermomix is at the top. Who puts a high speed in these conditions? And with the cornstarch you also go overboard. Let's see how I fix the mess!

  17.   pink said

I just did it with the tm31. With fresh spinach and wheat flour. You cannot reduce the time to 10 min even if the spinach is fresh because the garlic is raw and the cream is too liquid. At 20 min it is perfect. And I had to put it to grind afterwards because it was impossible before. It was moving too much and the milk was coming out of the beaker. Thanks for the recipe!

    1.    Irene Arcas said

Hello Rosa, where have you seen that the cooking takes 10 minutes? In point 3, which is where the garlic and spinach are added, he talks about 20 minutes. I have been making this recipe for more than 10 years and it comes out perfect with all TM models. Perhaps if you have used fresh spinach the volume they occupy in the glass is greater and at first you have to hold the cup with your hand for the first 10 seconds that it is grinding ... but then the machine has to be able to handle it more than enough ... if not So maybe the machine has something wrong and you should take it to the technical service. Thanks to you for writing us !! I'm glad you liked it 🙂
