I still had a small jar with candied fruit this Christmas and I have taken advantage of it to prepare this cake, which also has some chocolate fondant chips.

It is a cake to enjoy the breakfast or snack and that we will prepare, in Thermomix, in a few minutes.

Carries Brown sugar, sunflower oil and milk. If people with an allergy or intolerance to dairy are going to take it, you can substitute cow's milk for your vegetable milk preferred.

Ingredients

  • 4 eggs
  • 155 brown sugar (135 g for the sponge dough and 20 for the surface)
  • 120g milk
  • 100 g of sunflower oil
  • 230 g flour
  • 1 sachet of backing powder
  • 30 g of candied fruit
  • 30 g of chocolate fondant cut into small pieces or chocolate chips

Preparation

  1. We preheat the oven to 180º.

  2. We put the sugar in the glass and pulverize it during 10 seconds, speed 10. We remove about 20 g from the glass and reserve them.

  3. We place the butterfly and add the 4 eggs. We program 4 minutes, speed 3.

  4. Add the milk and sunflower oil. We program 15 seconds, speed 3.

  5. We remove the butterfly. Add the flour and yeast. We program 10 seconds, speed 5.

  6. Now add the candied fruit and the chocolate that we will have chopped with the knife.

  7. Mix with the spatula until everything is well integrated.

  8. We put our mixture in a mold of about 22 centimeters in diameter.

  9. We add a few drops of water (or lemon juice) to the 20 g of sugar that we have reserved in the first step and distribute that moistened sugar on the surface of the cake.

  10. Bake at 180º for approximately 40 minutes. Before taking it out of the oven we will have to check if it is well baked.
