It may seem strange to you that we have made a strawberry ice cream with balsamic vinegar of Modena but when you try it you will love it because it has a authentic strawberry flavor.

Has a more sophisticated taste than others ice creams and is that the vinegar balsamic from Modena what it does is enhance the flavor of strawberries without modifying other qualities such as the texture of the ice cream.

To make this recipe you can take advantage of those strawberries that are uglier. You just have to wash them well, remove the peduncle and the part that is poorer. You know we don't like to throw anything away.

Ingredients

  • 400 g of clean strawberries
  • 110 g of sugar
  • 40 g of invert sugar (see recipe here)
  • 120 g whipping cream
  • A splash of Modena balsamic vinegar

Preparation

  1. We put the cleaned and quartered strawberries in the glass. Add the sugar and balsamic vinegar of Modena. And we mix for 15 seconds, speed 2, left turn.

  2. We let it rest for 30 minutes.

  3. After time, we grind the mixture for 1 minute, progressive speed 5-7-9. We remove the mixture to a bowl.

  4. Without washing the glass, we put the butterfly on the blades and pour the cream. We program speed 3 1/2 without time and we watch until it is semi mounted. This step can vary depending on the cream and the temperature you have. In my case it was 45 seconds. Be careful because too much time can cause the cream to turn into butter.

  5. Once we have the cream ready we lower it towards the blades. With the butterfly still on, we select speed 2, no time and pour the strawberry cream into the mouth. When we have finished we stop the machine and, if necessary, we finish mixing with the spatula.

  6. We pour the cream into the refrigerator and follow the manufacturer's instructions. In my case, I used the Kitchen Aid refrigerator and left the cream for about 15 minutes.

  7. Then we transfer the cream to the ice cream molds and freeze for at least 2 hours.

  8. Pour the cream into a container, better if it is metal and a tray with a high edge, and freeze for 45 minutes.

  9. We remove the container from the freezer and mix the cream with a spoon or fork to break the ice crystals.

  10. We repeat this same operation 3 more times. This is essential so that the ice crystals are small and the ice cream remains creamy.
