Chicken Burritos

Well well well, for today super dinner with these: super XXL chicken burritos. And I say super XXL because with 2 of these burritos we dined almost 4 people. They are super tasty and spectacular ... full of flavor! The truth is that I love this type of dinner.

The key here is to find some super large fajita or wrap tortillasBut if you can't find them or worry, with the fajitas tortillas of a lifetime it will be just as good. Only that you will get 4 or 6 burritos approximately.

Above we have put a capita of guacamole (here is the recipe for homemade guacamole for your thermomix) and sour cream. And then a little bit of pico de gallo (a small accompaniment made from tomato, lemon, onion and coriander).

It is very interesting because you can leave the filling done and assemble your burritos at the last minute.

Super XXL chicken burritos topped with guacamole, sour cream and pico de gallo. The perfect dinner.

Super XXL chicken burritos

Ingredients

Burritos

  • 100 g red onion
  • 1 pear tomato, quartered
  • 50 g olive oil
  • 100 g of water
  • 1/2 pill of chicken concentrate
  • a pinch of salt
  • a pinch of pepper
  • 400 g of chicken breast in thin strips
  • 2 tablespoons soy sauce
  • 100 g of green pepper
  • 2 extra large super tortillas (or 4-6 small ones)
  • 1 lettuce head

Rooster's beak

  • 1 pear tomato, diced
  • 1/4 of sweet onion in very thin strips
  • juice of 1/2 lemon
  • salt to taste
  • chopped cilantro to taste

Sour cream

  • 100 g of cream
  • juice of 1/2 lemon
  • a pinch of salt

Guacamole

  • 2 large tablespoons of guacamole

Preparation

  1. fajitas

    We put the oil, onion, pepper and tomatoes in the glass. We chop 4 seconds, speed 4. We program 6 minutes, 120º, speed 1.

  2. Add the chicken, salt, pepper and program 3 minutes, 120º, left turn, speed 1. 

  3. Add the crumbled bouillon cube, the water and program 10 minutes, temperature 100º, turn to the left, speed 1. 

    While the chicken is cooking, we can prepare the sauces (see below).

    We add the soy sauce and program 5 minutes, temperature 100º, turn to the left, speed 1.

  4. Sour cream

    Mix all the sour cream ingredients in a bowl and mix vigorously with a fork. We booked.

  5. Rooster's beak

    Mix the ingredients for the pico de gallo in a bowl and stir well. We booked.

     

  6. Assembling the fajitas

    Heat the tortillas in a pan or in the microwave. We fill them with the chicken, the lettuce and the mayonnaise.

    We close our burrito well placing the end down so that they do not open. Cover with the guacamole, sour cream and pico de gallo.
