I've been wanting to show you this recipe for a long time. For me it is without a doubt one of the most delicious cakes I have ever eaten. Indeed, as its name indicates, it has a friend really fluffy, which make it perfect to drink at any time, accompanied by a good coffee, chocolate, milk or tea. Try it and you will not be able to stop repeating !!

Ingredients

  • 180 g de azúcar blanquilla
  • 4 eggs
  • 1 pinch of salt
  • 200 g of wheat or pastry flour
  • 50 g of almond flour or chopped almonds (optional)
  • 16 g of chemical yeast
  • 90 g of sunflower oil
  • 180 g of semi-skimmed or whole milk, oat milk, etc.
  • A dash of vanilla flavoring or a teaspoon of vanilla powder (optional)

Preparation

  1. We preheat the oven to 180º with heat up and down or a fan.

  2. We prepare a removable mold about 24 cm in diameter x 8 high and spread them with butter or olive oil. (We can also sprinkle the base with sugar and chopped almonds).

  3. We put the 180 g of sugar in the glass and pulverize 30 seconds in progressive speed 5-7-10.

  4. We separate the sugar in 2 bowls, in one we will put 80 grams and in another the remaining 100 g.

  5. We put the butterfly and put in the glass the 4 whites of the eggs - we reserve the yolks - and a pinch of salt. We program 8 minutes, 37º, speed 3-1 / 2. When they start to assemble the meringue -at two minutes of operation-, we add the 80 grams of sugar through the mouth without stopping the machine but little by little. We reserve in a large bowl.

  6. In the glass already without butterfly, we add the wheat flour, the yeast and the remaining sugar, sift 15 seconds, speed 6.

  7. Add the oil, milk, vanilla, yolks, and program 10 seconds, speed 6.

  8. Pour the flour mixture into a bowl and add ¼ of the meringue. We mix so that the dough is lighter. Now we add the rest of the meringue and mix with enveloping movements with the help of a spatula so that the meringue does not fall and air our dough.

  9. Pour the mixture into the prepared mold and put it in the oven 45 minutes at 180º (If we see that it is toasted too much, we cover it with albal paper so that the surface does not burn). We check with the help of a toothpick that it is perfectly cooked.

    Hi, I made the cake and it came out delicious, but it didn't turn up much. The oven I put it up and down, but without a fan. Do I have to put it on to make it go higher? Thanks

    Hello Rachel
    If your oven does not have a fan, it is better to place the cake in the middle of the oven and only with low heat (180 °). It will take about 40 minutes to make and it will be enough. If after this time you see it a little white at the top, you can heat it up for 3 minutes. But only if it's already done.
    I hope it comes out at least like me
