I have to admit that this sweet fruit and pasta salad recipe was love at first sight. As soon as I saw it and tasted it, I knew that it was going to become a Special recipe from my cookbook.

And it is that, in addition to the showiness and originality, it has other characteristics such as that it is very simple to do and that it can be done with lots of fruits.

This type of recipe is good for the summer, when you feel like it fresh and lighter dishes. Or on those occasions when you have prepared a dessert with more calories and want to lighten the rest so as not to go overboard with the diet.

A salad as original as it is versatile

Ingredients

For the caramelized orange peel

  • the skin of 1 organic orange
  • 100 g of water
  • 60 g of sugar

For the rest of the recipe

  • 140 g of short pasta
  • 1 tablespoon (soup size) dried cranberries
  • 1 tablespoon (soup size) raisins
  • The juice of 1 orange
  • 1 kiwi
  • 4 dried apricots
  • 1 peach
  • 1/2 green apple
  • 1 tub of fresh cheese
  • 6 edible flowers
  • mint leaves

Preparation

  1. We wash the orange well and make strips only with the orange part. We will always make sure that they do not wear white skin because it is bitter.

  2. We put the strips in the glass together with the water and sugar. We program 10 minutes, 110º, spoon speed, without beaker.

  3. At the end of the time the strips will have caramelized and we will also have a dense syrup. We withdraw and reserve.

  4. Without washing the glass, we put 1 liter of water and heat it for 5 minutes, 100º, speed 1.

  5. Next we add the pasta and program the time indicated on the package, 100º, speed 1. In my case it was 8 minutes.

  6. Meanwhile, we put the blueberries and grapes in a bowl to hydrate with the orange juice.

  7. Peel the fruits and cut the kiwi into slices, the dried apricots into strips and the rest into cubes.

  8. When the pasta is finished cooking, we drain it with the help of a strainer or the basket. We put it in a bowl and add the blueberries and drained grapes, the dried apricots, the peach and the apple. Add a little of the orange juice and mix well.

  9. We cut the fresh cheese into cubes or dice and distribute them avoiding handling them a lot so that they do not break.

  10. And we finish decorating with the kiwi slices, the candied orange peel strips, the edible flowers and some mint leaves.

As I mentioned before, you can use a great variety of fruits: mango, strawberries, pomegranate, cantaloupe melon, cherries, nectarines, Paraguayans ... Basically all are equally rich in this recipe.

You can take this fresh or cold recipe. If you choose to drink it cooler, follow the recipe until step 5 and store it in the fridge. Continue with steps 6 and 7 when you go to serve it.

In the event that you are over caramelized orange peel, you can use it for other recipes such as chocolates or to decorate homemade ice cream or other desserts.

    Where do you buy edible flowers? Never seen it

      I buy them at the Mercat Central de València but I have seen in Mercadona that there are some salads that also have flowers
