The recipe for homemade tahini It should be mandatory in any recipe book worth its salt. That's why in Thermorecetas We want to share with you this essential recipe to make hummus and in other many dishes.

The truth is that preparing it at home has no secrets. Although I have to say that with Thermomix everything is much easier because it allows us to give it our personal texture. You can make it thicker or more runny according to your preferences. You just have to keep in mind that the more you grind, the more it heats up and the more liquid it will be.

Did you know that you can prepare black or white tahini? Yes, you just have to choose the right sesame seeds. In specialized stores you can find them black or normal without toasting like the ones in the photos.

Hi! Great recipe, thanks. But I have a doubt ... you say that 10 days in the fridge ... I have the shopping jar for months ... and it has never spoiled or has made us feel bad ... why do you give it so little expiration?
    Thanks! All the best.

Because this one does not contain preservatives. Besides, the maximum I've had it in the fridge is 10 days and I can't say that it can last longer when I don't know ... you understand me, right?

      Regards!

If you can't find it, you can substitute sunflower oil. Its flavor is more neutral than that of olive.

What is the difference between black sesame and white sesame?
Just that the black is tan and the white is not?

    1.    Mayra Fernandez Joglar said

There are basically three types of sesame:
White: it has a milder flavor like dried fruit. They are easier to find and you can roast them at home.
The toast: which is white but it has been toasted and has a more golden color. (Not to be confused with golden flax seeds)
Black: has a more bitter taste but has more calcium than white.

I have read that there are also brown and red sesame but I have not found them yet.

      Regards!!

Thank you. From what you say, the black must also be roasted. Very interesting the fact that it contains more calcium, I understand that it also has a higher contribution of iron than white.
        Thank you for answering me.

It is not mandatory but with the heat they give off more aroma and its own oil will facilitate the crushing. Be careful with toasting it too much because being black does not change the color.
