Chocolate orange muffins

What a delicious breakfast! A good coffee with some chocolate and orange muffins, fluffy it's a great way to start the day.

Every week I make something for breakfast, be it cake, bread or muffins. I really like the lemon muffins, although these have a special touch.

If you like the orange cake you have to try these muffins since the mixture of orange with cocoa It is very tasty ... you will love it!

I have used cocoa powder that is used to make hot chocolate. If you want them less sweet, you can make them with unsweetened cocoa powder. In the photo the first two cupcakes have sugar on top, but the third not because at home we have divided tastes, some of us like it with sugar and others not, so I do half and half.

It is important the repose of the dough in the refrigerator for a minimum of 1/2 hour, but if you leave it a little longer, nothing happens.

The time depends on each oven, but in 15 minutes, more or less, they are done.

    This week I'm wondering 🙂
    When you refer to pastry flour, you mean the normal life-long one with which it is usually coated etc ... or a type of flour that here in the USA is called "Self-rising flour" which has added salt and some yeast ?
    Also about sunflower oil I find it difficult to find it and the closest and healthiest thing I find is that of corn, do you think it would be good or better to use olive oil?
    And last question, the envelope of chemical yeast how many grams does it have? here the baking yeast comes in a loose jar.

      very good from Tarragona.
      With corn oil it will be better, I think, than with olive oil, since the flavor is softer and similar to that of sunflower.
      Regarding the flour, if you buy it with yeast you will not have to add the envelope of chemical yeast. If you put common flour, you will simply have to add the baking powder.

      Hello Susana, the pastry flour is normal but finer flour. It can be done in the Thermomix: you add the normal flour and pulverize it for 10 seconds at vel. progressive 5-7-10, ready !. Regarding the oil, the corn oil is better, because the olive oil is stronger and can give it too much oil flavor. The yeast sachets have 16 gr., So that you weigh them in the Thermomix up to 15 gr. and add a little more, you already have it.

    Hello. They have given me the thermomix although it is an old model and I have not used it yet but I am reading many of your recipes. When it says spoon speed or varoma speed, what does it mean?       Hi Angela, the vel. spoon is the lowest and you have to put vel. 1 and the butterfly on the blades. The temp. varoma is the highest temperature, I think the highest of the 21 is the temp. 100. Greetings and get down to work, you'll see how wonderful.

      Hello Susana, I make them with heat up and down. In the cakes I usually put the heat down first for about 10 min. and then heat up and down.     Hi! I wanted to tell you that I get about 24 units and that lasts almost for the whole week, but the truth is that it bores me to eat the same thing every day, so I made some change in the recipe ...... I make half of the preparation and I substitute the chocolate and put 30 grams of coconut in the fridge and without washing the glass I prepare the other half and add 30 grams of chocolate (half of the entire recipe as is), I bake them just 15 minutes and they come out perfect! !!!! and the coconut ones come out very soft and I love them and so I have to vary every day !!

      Hello Rocío, I do not get off. I think it's because you take them out ahead of time and they go down. As soon as I see them done, I take them out of the oven so they don't dry out.       I give you some tricks so that you can put them into practice and tell me if it improves the matter. Instead of standing for 30 minutes, keep them for several hours (say 2 or 3) in the fridge. Sometimes paper capsules are quite flimsy, making us "scattered" rather than slender. Nor should the oven be opened until the first 10 minutes have passed. Another tip is that you do not use the paper capsules alone, but use a mold to make muffins or the silicone molds for cupcakes. And finally, if you have an oven with a fan, use it, since that way the heat will be better distributed. Let's see how it goes!
