Yogurt cake

This yogurt tart is so easy and straightforward that it takes just a moment. In addition it is very smooth and delicious.

In the original recipe, the base is made with breakfast corn flakes, crushed with butter and baked for 10 minutes. Although I make it with a base of Digestive® biscuits with butter and does not need oven. This base is faster to make and goes perfect for this type of cakes.

It can be decorated with a layer of jam of the flavor that we like the most and I, in this case, have decorated it with assorted fruit in syrup and cherries in syrup. The combination of the fruit with the yogurt cake it is perfect.

        Hi Lucia. I have not used gelatin sheets for the recipe, nor have I used neutral gelatin powder. I have used two envelopes of royal curd. The only thing you have to do, unlike what comes in this recipe, is that after mixing the ingredients you add the royal gelatin envelopes. You have to slide them well. Once softened in the mixture, they are poured into a small saucepan and heated until they start to boil. At that moment, the mixture is taken and poured over the biscuit base. In a few minutes it will be completely set. It is mandatory to heat the mixture if curd is used, otherwise it will not curdle. Likewise, powdered gelatin must also be heated to set. I do not know anymore. I hope it helps you. I really like the way it comes out with curd and it's faster than with gelatin.

      Hi Llina, I do use the Mandarin brand, but they are not small. They are big. If they are small you have to use 12. I suppose that the yogurt also influences as it is creamier. All the best.
