Mascarpone Cheesecake

This mascarpone cheesecake is the perfect excuse to give out a couple of tubs of mascarpone cheese about to expire in the fridge.

I don't know anything was happening to me to take advantage of them but when I found this recipe posted by Eguski, I knew it was what I was looking for.

It's delicious!. I've done it a couple more times already and it's always been a success.

We like to put it above jam, either from raspberry or blueberries. Although it can also be decorated with strawberry jelly.

He wears a cookie base Digestive® because I like it the most, but it can be made with any other cookie, such as Maria® cookies and even with cereals.
