Milk pudding

Rice pudding is dessert my father-in-law's favorite. When I know that they are going to come I try to do it because they love it, well, who doesn't! If I ever forget, after being at home for a while, drop the phrase: Didn't you make me rice pudding today? My mother-in-law doesn't want me to because they eat it in one sitting.

It is easy to do because, even if it takes a little time, do not be aware of it. It comes out very creamy like those made in the traditional way, but it takes two hours to make and without stopping stirring.

There are other vegan versions as rich as the traditional recipe and that adapts perfectly to your diet without ingredients of animal origin. You can use soy milk O well coconut milk which also has a very exotic touch.

And if you still haven't found your favorite recipe, I recommend that you take a look at this one. compilation with all the rice pudding recipes What have we published so far.

I do not get any recipe that I have looked for rice pudding or it comes out dry or it comes out very soupy and when I do not come out strong with the lemon peel I do not find the key to see if you could help me with this recipe that It is simple and I am not good at it I have already made many of many recipes and nothing, thank you

  3.   carmen said

Hello, I do not understand why in this recipe you say that it takes two hours to make because the times that you only put out 47 minutes there is something that fails me and I do not know what it is? Greetings and thank you

    1.    Elena said

Hello Carmen, when I say that it took two hours to make, I mean when I did it in the vitro and you did not have to stop stirring so that it did not stick. On the other hand, with the Thermomix, it takes less time and on top of that, you don't have to be aware of it. All the best.

Hello girls, to begin with congratulations on the blog that I love and because I have become very fond of baking thanks to you for the simple and delicious recipes that you put on. I just wanted to ask if I can add condensed milk to it and what measure if so. Thank you!! All the best.

    1.    Elena said

Hello Amagoia, you can add 200 gr. of condensed milk and remove 100 gr. of normal milk. The rest of the recipe is the same. If you try it, let me know how it was.
Thank you very much for seeing us and I hope you continue to like our recipes. All the best.

Hello Elena, I made the recipe for rice pudding just as you indicate, it has an unbeatable flavor, I love it, but I don't like the texture, it looks like a flan, you can hardly appreciate the rice grains, is there any way that the rice is more whole ??, thank you very much

    1.    Elena said

Hi Esther, you have to put in a little less time. Instead of 40 minutes, try 35 to see what you think. To make the rice more noticeable, you have to put it in less time. Try and tell me how are you? All the best.

  6.   feint said

Hello Elena, yesterday I made the rice pudding and it has been a success !! I added the condensed milk just as you told me, and it was delicious ... the only problem I had was that in the absence of 3 min to finish the whole process, everything overflowed and luckily it was close because otherwise the one I prepare ... well anyway It has been great ... thank you very much! All the best.

    1.    Silvia said

Amagoia, I'm glad that this dessert came out so delicious. I think that rice pudding is one of the most successful desserts made by thermomix and with condensed milk it is luxurious.

olaaa yaa I know what can fail you is that I think the recipe is wrong. Isn't it supposed to be to set the temperature 1º and let the speed be on? . All the best

    1.    Elena said

It's true, I'm modifying it right now. What a failure! Thank you very much for letting us know. All the best.

Hello I would like to ask about rice pudding if you can remove the butterfly and put a left turn and spoon speed, it is that I never get the butterfly to stay still it always gets up
    Thank you

    1.    Elena said

Hello Sonia, yes it can be done, but it is better with the butterfly. When you put the butterfly make a small turn to the right to secure it and if you pull up it does not have to come out. This is how it is insured and it will not come off. All the best.

  9.   Rocio said

Hello, I have made the rice pudding but I leave it less time, because I like rice more whole. How could it be less caloric? Well, I like to take care of myself. Merry Christmas!

    1.    Elena said

Hello Rocío, you can use semi-skimmed milk and use sweetener, but the truth is that it is not the same. I am from the north and this rice pudding reminds me of the typical one from Asturias. It can be made less caloric, but the result, although good, is not the same. Greetings and Happy Holidays!.

  10.   Laura said

Hello everybody! Congratulations on the blog, it is wonderful! I wanted to ask you, today I have made white rice to eat and since there is a lot left over I wanted to take advantage of it to make rice pudding, but what time and temperature do I have to put to make it good, knowing that the rice is already cooked.

    Thank you!

    1.    Elena said

Hello Laura, the truth is that I have never tried to do it with already cooked rice. I do not dare to tell you the times because I have not done it and I may be wrong. I'm sorry I can't help you. Greetings and thank you very much for seeing us.

  11.   Yolanda said

First of all, let you know that I love your website and, whenever I can, I try to go in to see how I can surprise my husband and my two little ones! I have recently had the thermomix and I don't know if it is because I don't understand it or because I have to make small approximations to some of the recipes that I make depending on our tastes ... Anyway, this is one of them, the rice pudding for me It has been very pasty, like caked and when it cooled, I won't tell you more…. Maybe it's a long time 40 '????
    Thank you very much

    1.    Elena said

Hello Yolanda, it is a compact rice pudding in the Asturian style and it is not too long. If you look at the recipe in the Thermomix book it comes with 5 more minutes. If you like more liquid, you have to add less rice and a little more milk while adding the butter and sugar. I think you will like it better that way. We have to adapt each recipe to our tastes.
Greetings and thank you very much for seeing us.

Hello girls I wanted to tell you something that has happened to me and see what I do wrong, I am a beginner and I would like some advice. I am making the rice pudding and I have not thought of another to lift the cup and suddenly the milk has started to come out, I suppose it will be normal ???? Ainss who sends me, hahaha. What can I do to fix it, I wait for it to cool down and put it back on, m kedaba cm about 25 minutes. thanksssssssssss

    1.    Elena said

Hi Lorena, put it back. The milk boils and that is why it comes out. Leave the beaker on and if something comes off the edge of the beaker, don't worry. Boil for so long to make it thick. I hope you like it. You will tell me. All the best.

      1.    Lorraine said

I have put it back on but it has been very liquid and with the color of butter, let's go that the broth is not white if not cm to welts, I do not know if I should have left it longer

        1.    Elena said

Hello Lorena, I think you have been cut. Try again. I hope you get it right. All the best.

          1.    Lorraine said

Well, I do not know if it was cut in the end, but my brother ate it and my boss also and I have said that it was delicious so it did not come out so bad ... to see if you can give me any idea, my mother is behind me so that Make a cake with cream, which you have craved, hahaha I made her the one in San Marcos last weekend and I do not know with which to surprise her this weekend, suggestions are accepted, thanksssssssssssssss

Hello girls! This long week of vacation I made this rice pudding, and I can only tell you that the result was incredible, chubby rather thick, as is customary in Asturias, and with a touch of anise that I added at the same time as the Butter. It is really worth doing, it is very easy and it is luxurious.
A kiss, and as always, thank you for your work.

The incredible rice pudding, I made it for Mother's Day and it succeeded. Thank you very much for your blog. Next week to see if I dare to make the cake of the 3 chocolates that I already have the ingredients bought.

PS By the way, what kind of rice do you use for this recipe? Thanks.

    1.    Elena said

Hello Maria, I am very happy that you like it. For me it is one of the best desserts. I always use SOS rice. All the best.

      1.    María said

Hello Elena, thank you very much for responding so quickly. As for rice, I was referring to whether you use bomba rice, long grain, basmati ... If one is better than another or is indifferent.

        1.    Elena said

Hello Maria, I always use long grain of rice and specifically the one from the SOS brand. All the best.

Today I prepared the recipe for rice pudding and I was amazed I was a little scared because my husband liked the one his mother made and I thought he would not like it but it has been a success he loved it and I thank you well I have been very good thanks to your recipe, but I have gotten a lot of it because my husband only eats it if I do it with less I have to change the time or leave it.

      Hi Mabel:

if it is that these husbands and these mothers-in-law are going to finish us off !! Luckily we have an ally that never fails ... the Thermomix!

What I usually do at home when there is rice pudding is freeze it tightly covered with cling film so that a lot of air doesn't get in. Then we make ice cream and it tastes… glorious !!!

      Kisses!!

For me, a fundamental step is missing, which is the scorched sugar that is put on it once it cools, although that goes with the taste of each one, but for the majority of Asturians that I know ...

    1.    Laura said

by the way, better if we use the left turn ???

  24.   Irenearcas said

Hello Angelaurgo, it is very rare that the rice and on top of the SOS brand come out broken. Have you checked that the butterfly was properly set? I have done it many times and I have never had broken rice. Maybe next time you can try to put a few minutes less and check the doneness of the rice and its texture. Maybe that way you won't get broken. You will tell me!

  25.   annajulian said

I made this recipe from the Essential book just as you give it and it was wrong. Both the lemon peel and the cinnamon stick fell apart, I had to remove them into pieces and the taste was between bitter and harsh, and I took care that there was no white part in the lemon peel. I believe that these ingredients should be removed before they have been cooking for so long. How about?

    1.    Irene Arcas said

What I do is put both the lemon peel and the large cinnamon stick, so they don't fall apart. But if you want, next time you can take it out halfway through cooking, so they will have flavor and surely they have not come undone. Thanks for writing us Annajulian!

    2.    Mayra Fernandez Joglar said

Working with the lemon peel is complicated because if we do not remove all the white skin it gives bitterness.

I strip the skin with a potato peeler. And the pieces that have white I undone them directly ... I do not risk that they have already spoiled a dish! Kisses!

  26.   Irene Arcas said

Hello Star, the cup does not start unless we indicate otherwise.
It's a shame that it turned out badly, it makes you very angry when the recipes don't turn out the way we want, right? It happens to us too, sometimes we make the recipes up to two or three times before we tell you so that they come out perfect. When it's not like that, then we don't like it either, because we put a lot of effort into each recipe to make it work for you. But surely you will get it the next time.

Anyway, soon we will publish another rice pudding, a little looser and with a special touch.

    Thanks for writing to us!

I have made the recipe at. verbatim and I've had k throw it away. It is not rice pudding, it is a puree.

    1.    Irene Arcas said

      Hello,
I'm so sorry. Are you sure you have put the butterfly on the blades? If you give us more information about why you had to throw it away, we could help you. Flavor? The texture? This rice is a classic in thermomix and it always comes out well. Maybe it's also because of the rice brand, we always use SOS. You will tell us! All the best.

  28.   Inma said

I tried to do it and when there were 27 minutes left, the milk started to come out of the mouth, even lifting the goblet because it was there next to it if the kitchen would not have been ...
Why could that have happened to me?

    1.    Ascen Jimenez said

      Hi Inma,
Maybe you've set a varoma temperature or a little more milk ... I can't tell you. Next try this other recipe that is my favorite. It does not have butter and the texture is perfect for my taste. I leave you the link: http://www.thermorecetas.com/2013/05/09/arroz-con-leche-a-la-naranja/
      Let's see what you think.

Hello Elena, I wanted to make a comment about the rice pudding and seeing that you put it at 100 speed, all the milk has boiled I think that the temperature 90 is better I lower it and one more query you do not add cream! All the best'

    1.    Ascen Jimenez said

      Hi Conchi,
Thanks for your comment. Sometimes it happens ... Lowering the temperature as you have done is the best solution. I leave you here the link to the rice pudding that I usually make at home. This version does not have cream or butter but it looks great. And it also has fewer calories. You can substitute the orange for lemon. This is the link: http://www.thermorecetas.com/2013/05/09/arroz-con-leche-a-la-naranja/
      A hug, Ascen

Hellooo!!! I have a question… I love this recipe and it seems very easy to make, but I would like to know how many people it is for? And if you could give me the quantities and temperatures for two people. Thanks 🙂

  31.   Peter said

It is also difficult for me to get the point of this recipe. This time, after reading all the comments, I made my adaptation and it has been better, but I still have to improve it. I have substituted 500g of milk for evaporated milk and I have put only 160 of rice, in my case integral (it also looks great), in addition to the orange peel also of lemon and the first minutes I have reboiled them from 40 to 30, temperature always 90, at a higher temperature it comes out, and always speed 1. After I have removed the skins of the citrus fruits and the cinnamon stick, I have added fructose, only 125g, since it sweetens much more but I find it healthier, I have not put butter, and I have programmed 10 minutes, temperature 90, the more temperature I get, and speed 1.

    1.    Irene Arcas said

Great Peter! Thank you very much for your suggestions 🙂

  32.   Anna said

Hi! Thanks for your work 🙂
The rice pudding has turned sour 🙁 what can I do or why?
    Thank you

    1.    Irene Arcas said

Hello Anna, well I imagine it was due to the lemon / orange peel… maybe you cut off a lot of the white part (which is the bitter one). Did you remove the peel? Maybe it was crushed too much ... is the sugar point okay?

  33.   Lorena said

Hi there! Can you tell me what function does butter have? Does it influence the thickness? I like that it remains a little liquid and I do not put it on because I am impressed that it thickens it even more ... will you help me? Thanks

    1.    Irene Arcas said

Hello Lorena, the butter gives it creaminess, so don't worry that there is nothing thick. You will see what a delight! Keep in mind that it is a very small amount for a lot of milk. Can you tell us if you like the result? Thanks for writing to us! 🙂

  34.   Maria del Carmen said

YOU HAVE SKIPPED THE “LEFT TURN” STEP OF THE THERMOMIX !!!! IT HAS CRUSHED EVERYTHING AND I HAVE HAD TO THROW IT OUT ... what a fabric ...

    1.    Mayra Fernandez Joglar said

      Hello Maria del Carmen:

I have reviewed and compared the recipe with the official book and the recipe is correct. If you have put the butterfly you do not need the turn to the left.

Too bad you threw it away because you could have made rice pudding ice cream !!

      Regards!

  35.   Carmen said

I just made the recipe and it turned out fantastic!
A variation that I have made is to start by putting the sugar with the lemon and orange peel and crush it well. The rest exactly the same. It's so good that I can't stop eating! Won't I stay for the rest of the family !?

    1.    Mayra Fernandez Joglar said

I'm with you Carmen… it's pure vice, with its burnt, creamy sugar. A real delight !!

Hello, my rice is bitter because of the lemon, I did not know that the white part made it bitter, I would love to know if I can add something to remove or hide it. bye thanks

Hello!! I made my rice pudding but it feels bitter because of the lemon peel how could I improve it_

    1.    Irene Arcas said

Hello Rosa, so that it does not sour, we must only put the yellow part of the shell, which does not have any white part. In any case, if it still makes you bitter, you can remove the lemon peel first so that it does not cook for so long or not add it directly. I hope I've helped! A hug.

    Hello Elena,
First of all CONGRATULATIONS xr your work ?.
To me, your recipe for rice pudding, following your instructions always looks great ???.
At least my mother and my neighbors on the side say so, because since I don't like it and there is so much money coming out, I share it.
My question is the following: Can it be frozen in a taper and eaten once defrosted as if it were done a few hours ago?
    I wait your answer.
Thank you very much and go ahead !!!
    A hug,

    Ma Angels

    1.    Irene Arcas said

Hello Ma Àngels, we can't tell you if it can be frozen or not. We have a division of opinions in the team !! Hehehe the fact is that nobody has tried to freeze it but some have heard that it can be ... so if you want to try freezing it and tell us! A priori I would tell you that rice does not freeze very well but we know that there are people who do freeze it so ... do you dare to try it and tell us? Thanks for your message 🙂

Totally Nayra 🙂 When I don't have cinnamon sticks, I put a little ground cinnamon on it. 1/2 small teaspoon would suffice. Thanks for writing to us!

I made this recipe and the rice was floating in a liter and a half of milk, I looked for the recipe in the book and it did not say speed 1, it said left turn, spoon speed, that was something else

    1.    Irene Arcas said

      Hello Maria Luisa,

There are several ways to make rice pudding, each person likes rice pudding in one way. But it is rare that after 40 + 7 minutes of cooking the rice remains floating in the milk. Are you sure you put the ratio of rice and milk right? In any case, keep an eye on the blog because soon we will publish a super creamy rice pudding that will be delicious. Thanks for writing to us.
