      I use pear tomatoes because they are the ones that give the best color and result ... but you can do it with the tomatoes you want, although the result will not be the same.

      To peel the tomatoes you have several options: If the tomatoes are firm and smooth, you can use a very sharp peeler. Although the ideal would be that you use the classic system of blanching them. That is, make a cross with a knife on the skin of the tomato. Dip them in boiling water and take them out quickly. You will see that where you have made the cross the tips are raised. Strip the skin and they peel themselves.
