We start the day with some simple but tasty toasts or canapés made with tomato, avocado, mozzarella and washed down with basil oil.

The flavored oil gives it character and contrasts perfectly with the flavor of the rest of the ingredients. By the way, if you have excess oil you can use it as if it were a pesto and accompany a plate of fresh pasta, a salad or with pizza.

For this recipe I recommend that you start by preparing the basil oil and that you assemble the toasts at the last minute so that the bread does not become soft and crisp.

Ingredients

  • 4 slices of sliced ​​bread
  • 1 Tomate
  • 1 Avocado
  • 1 ball of mozzarella
  • 1 dash of lemon
  • 1 tablespoon pine nuts
  • Salt and pepper

For the oil:

  • 15 g of basil leaves
  • 60 g of extra virgin olive oil

Preparation

  1. In a small pot, blanch the basil leaves for 10 seconds in hot but not boiling water.

  2. Refresh them in ice water to cut cooking. Fill the glass with water up to the 1/2 liter mark, add the basil leaves and blend for 15 seconds at speed 5. Drain very well with the help of a fine mesh strainer.

  3. Put the leaves in a pot, add the oil and close with the lid. Beat so that the oil is impregnated with the aroma of basil.

  4. Cut out each slice with a 6 cm diameter round ring. Toast the circles in the toaster until golden brown and crisp.

  5. Wash and dry the tomato, cut it into thin slices and let them drain so that they lose all the water.

  6. Peel the avocado and also cut it into thin slices. Sprinkle them with the lemon splash so they don't get ugly.

  7. Drain and cut the mozzarella into slices.

  8. To assemble: place a circle of toasted bread on the base, put the seasoned tomato, avocado, mozzarella and sprinkle with a string of basil oil and finish by placing about 2 or 3 pine nuts on top of each canapé.

  9. Serve immediately before the bread becomes soft.
