Toasts with egg salad

You already know that I like to have cooked eggs because they get me out of a lot of trouble. If I have them already prepared, I can make a thousand things in a moment like these toasts with egg salad.

But is that, in addition, they can be the main ingredient of rich preparations and they also serve me for complete other dishes with steamed vegetables.

To wear a balance diet We cannot abuse these toasts because, by bringing mayonnaise, the calories skyrocket but we can accompany it with a salad of mixed lettuce leaves and thus we will be satisfied.

On the other hand, it is an interesting way to include turmeric, which is a powerful ingredient. anti-cancer. For our body to absorb it at the intestinal level it has to be mixed with olive oil and black pepper. It is also responsible for the beautiful yellow color of our egg salad. Interesting, right?

Ingredients

• 3 boiled eggs (see recipe here)
• 30 g of fresh onion
• 75 g of mayonnaise (see recipe here)
• 1 teaspoon (of coffee) turmeric
• Black pepper
• Dill
• Cucumber
• Bread toasts

Preparation

1. Peel the onion and chop it for 3 seconds, speed 5. They have to be minced. We withdraw and reserve.

2. We peel the boiled eggs and put them in the glass, halved. We bite during 2 seconds, speed 3. We check that the pieces are rather small in size. If there is a large piece, it can be chopped later when we mix them with the mayonnaise.

3. In addition, we mix the mayonnaise with the turmeric in a bowl, forming a yellow sauce. Add the chopped eggs, the chopped onion and the black pepper. We mix until both preparations are well mixed.

4. While we toast the bread, we can wash, dry and peel the cucumber. We cut thin slices that we will place on the toasted bread. Top each toast with the egg salad and sprinkle with chopped dill.

5. We serve before the bread is no longer crisp.
