Toasted chickpea flour

Not long ago, in the recipe for the chickpea salad with lemon dressing, I told you that in summer it was hard for me incorporate legumes in the diet. Thanks to the toasted chickpea flour this task will be much easier.

This is one of the basic recipes that without the Thermomix I would never have dared to prepare.  

It will serve as a base for creams, cakes or crêpes. And the best of all is that Celiac they can take it without any problem.

To make it we can use the chickpeas that we like the most. We will only have to take into account that they have to be clean and dry. I have used Pedrosillanos, which are tiny and a little finer than the Castilian ones, but, I said, use the ones you have at home.

During the first minutes the chickpeas will noisy, so be careful to do it during the day if you do not want to see your angry neighbors!

      Hello Toñi, it has many uses. Look, in gluten-free diets it substitutes wheat flour. But, above all, it is widely used in oriental, Indian and Pakistani cuisine, mainly.
      Vegetable batters are delicious with a mixture of chickpea flour and egg and it is also widely used as a thickener for sauces and stews, to which it gives a very special flavor.
      In fish fritters, delicious, especially in Andalusian fried fish, and in shrimp pancakes.

    Hola!
    In principle, I have tried this recipe with chickpeas and rice and the result is the same. Although I like the flavor more chickpea.
    The most I have ever experienced has been up to 6 months in a tightly closed glass jar. The conservation can be longer, but I always find a recipe to apply this fantastic flour.

    Is this flour to coat the same as the normal one? It catches my attention, but I would not know why to apply it.

    For my thermomix model which is the tm21, which would have to put? Ajito minus minute and speed 4?

      don't worry, I understood you perfectly… if sometimes our fingers slip away !!

      I have just put the equivalences with TM21 to the recipe so that it is easier for you to adapt it. For this recipe you have to put temperature 90º and speed 4. The rest all the same.
