This dish was a hit at dinner last night! We made some different quesadillas than the usual ones: tuna and cheese quesadillas with guacamole and yogurt sauce. We prepare a creamy tuna, onion and mayonnaise paste in the thermomix, fill the quesadillas, put a little cheese on them and add to the pan until golden brown and toasted on both sides. Meanwhile we prepare the yogurt sauce and then we mix it with a few slices of avocado and enjoy !!

Although it is true that they must be toasted at the moment so that they are crunchy, you can leave the filling and also the yogurt sauce prepared. This way you would only have to toast them and prepare the avocado (which oxidizes very quickly, so you have to prepare it at the moment).

It's an easy and delicious dinner that the kids are going to love. You will see!

Tuna and cheese quesadilla with avocado and yogurt sauce

Ingredients

  • 4 wafers of fajitas, enchiladas, quesadillas (I used with corn)
  • 2 small cans of tuna in oil (the weight of each can was 80g)
  • 2 large tablespoons of mayonnaise
  • 1 small tomato cut into small cubes
  • 1/4 sweet chive or red onion
  • juice of 1/4 lemon
  • mixture of grated cheeses to melt
  • 1/2 unsweetened Greek yogurt
  • juice of 1/2 lemon
  • a pinch of salt
  • a pinch of pepper
  • chopped cilantro (optional)
  • 1 Avocado

Preparation

  1. We put the chives in the glass and crush 5 seconds, speed 7. We lower the remains and repeat the operation so that it is very minced.

    Now add the mayonnaise, the juice of the 1/4 lemon, a pinch of salt and the well drained tuna. We mix 10 seconds, speed 4. Add the diced tomato and mix 10 seconds, spoon speed. We remove this mixture and reserve.

  2. We put 2 wafers in the microwave for 20 seconds, power 800w. We take them out of the microwave and place the first wafer in a pan, place half of the tuna filling and cover with a little of the grated cheese. Cover with the other wafer and put on medium-high heat for about 2-3 minutes for each side. Take care that they do not burn but they should be golden brown.

    We do the same with the other 2 wafers.

  3. While the quesadillas are cooking, in a bowl we prepare the yogurt, with a pinch of salt, another of pepper, the juice of 1/2 lemon and the chopped coriander (optional). We stir well and reserve.

    We also prepare the avocado, which we simply slice into thin slices with a splash of lemon (so it doesn't oxidize) and salt.

  4. Now we only have to plate them: we serve each quesadilla with a little of the yogurt sauce and a few slices of avocado on top. To enjoy!

    What to say? Without their term, they are nothing, I have prepared that recipe without that silly machine. Do you think that is "cooking"?
