Ingredients

4 servings of desalted cod (already thawed and drained) or monkfish, or hake.
4 sticks of celery (approx. 60 g)
1 onion (approx. 140 g)
1 golden apple (approx. 75 g)
100 g of skimmed fresh cheese (can be made with the whole, without skim)
130 ml water
1 teaspoon of salt
20 ml of aceite oliva

Preparation

Put the celery, onion and apple in the glass. We crush during 4 seconds, speed 5.
Add the water and salt. Place the Varoma container and the fish on their tray (if it is cod, skin side down). Cover.
We program 13 minutes, Varoma temperature, speed 1.
At the end, remove the Varoma and uncover it so that cooking does not continue. Be careful when uncovering, the steam burns a lot.
Add the cheese to the glass and blend for 1 minute, progressive speed 5/10.
Schedule speed 4, no time, with the beaker upside down and slowly letting the oil fall on the lid of the Thermomix. The oil will fall into the nozzle and will strain between the grooves left by the beaker. In this way, we will make an emulsion with the oil and the sauce. When we finish pouring the oil, we stop about 5 seconds plus the machine running and we stop it.
We serve the fish with the sauce on top.
