Wholemeal carrot cake

This week I bring you a delight. I guess most of you have tried this dessert in countless well-known coffee shops. Today I propose a version integral of this dessert where we combine natural and very healthy ingredients. I present this whole wheat carrot cake.

The carrot cake has been known in our country for a short time. I still see strange faces in some places when I say that I have used carrots to make a dessert and there are still prejudices about some ingredients for baking. The same thing that we use fruit in salty preparations we can use vegetables for sweet dishes without any problem. Those of you who already know me a little bit know that I love that combination of flavors.

On this occasion I dare with an integral version of the dessert to make it more healthy. In it I use a mixture of whole wheat flours that give a spectacular color and flavor to the dessert. I have opted for the wheat and spelled for its elaboration. I dispense with white sugar to use whole cane sugar o panela which will give the cake extra juiciness.

The coverage is less healthy. It is totally optional but it gives a great flavor to the cake. It is a classic in cakes like this. It is a frosting of cream cheese with icing sugar and butter that is super soft when combined with juicy biscuits like this one.

      Hi Charo! Sure it can be made with regular flour. You would have to substitute the amount of whole wheat flour for the same in normal flour. You'll see how rich you have! ?

      If you want to make it only with normal flour, you would substitute the amount of the 2 flours for normal flour. If you want to combine wheat and spelled, replace the whole wheat flour with the same amount of normal flour and keep the amount of spelled flour?
