9 gluten-free recipes

May is the month par excellence of communions, of the first baths on the beach, of excursions to the countryside and it is also the celiac disease month.

From Thermorecetas we want to help publicize this disease and that people become aware that it is not a question of fashion but of health.

Celiac disease consists of a gluten intolerance It produces an inflammatory reaction in the mucosa of the upper small intestine, which prevents nutrients from being properly absorbed and assimilated. Giving way, among other symptoms, to loss of appetite, vomiting, nausea, fatigue or anemia that is not cured even with treatment.

There is an important fact: around 75% of patients are yet to be diagnosed, so if you have any of the symptom above, go to your doctor for help.

Fortunately, it is becoming easier to follow a gluten-free diet at home. Although I cannot say the same when it comes to eating out or dining out because there is a risk of cross contamination. It may seem silly but success does not lie in serving meals with gluten-free bread if it has been cut on the same board or with the same knife as normal bread.

There is still a long way to go, so in the meantime, to make life easier for celiacs and their families, I have prepared a compilation with 9 gluten-free recipes. It has turned out to choose only 9 since in the Celiac section There is a large number of Special Recipes section, so I have chosen those that may be more interesting.

I hope you enjoy it!

Quinoa béchamel: The compilation begins with a basic recipe such as quinoa béchamel. This fantastic recipe will help us prepare countless of recipes. Do not stop trying it even if you are not celiac, you will be surprised by its texture and flavor.

Corn pasta salad with orange vinaigrette: Now that the time for salads is approaching, we can enjoy this one made with corn and with a citrus vinaigrette that goes wonderfully.

Millet couscous with spiced chicken: If there is something good about celiac disease, it is that you discover cereals and seeds that you hadn't even noticed before that they existed.

This is what happened to us with the couscous that we always made with the typical grain and now that we know the millet we do not change it for anything.

Portobello mushrooms stuffed with ricotta, chili and lime: This recipe has it all, has a rich flavor combination, and is simple to prepare. It is also very elegant and serves us as a snack or for a special dinner. And of course, not a hint of wheat, barley, rye or oats.

Crispy rice croquettes: It never hurts to have one harvest recipe like this, so we can give out the cooked rice. The crunchy touch is given with some toasted corn flakes and they are thus rich and informal.

Sweet potato and cabrales balls: Forget that the best croquettes are those of your mother or your grandmother. The best are these sweet potato and cabrales cheese balls, especially if you make them with your Thermomix. There is no comparison!

Sacher cake with almonds: The sweet section kicks off with an almond-based classic that makes it even richer.

With this recipe it is easy to enjoy the taste of chocolate without complicating life. You can use it for those special events like birthdays or family reunions.
