Ayyy how much I like the soups for dinner, like the light arugula soup that we were preparing the other day .. They are so healthy and so rich, and more so now that the weather is bad and it's been a little cold. We will be publishing rich soups throughout the winter, so today we will start with this delicious Asian soup with noodles and vegetables.

Of course, you can customize it with the pasta that you like the most. I really like Asian soups precisely because of the pasta with which they are made. In this case, I have put some wheat noodles flat, but we will get to know different types of oriental pasta that combine perfectly with soups.

Delicious and healthy Asian soup, made from flat wheat noodles and various vegetables. Ideal as a dinner or as a starter for meat or fish.

Ingredients

200 gr of flat noodles
1 liter of water with a pinch of salt
1 Carrot
1 potato
4 handfuls of fresh spinach leaves
800 gr of chicken or vegetable broth (to your liking)
4 tablespoons soy sauce

Preparation

We put the water and salt in the glass and heat 8 minutes, spoon speed, varoma temperature. Add the pasta through the mouth of the cup and set the time indicated on its package, 100º, spoon speed.
We drain using the basket or a strainer. We booked.
Without washing the glass we put the carrot and potato peeled and in large pieces and crush 10 seconds, speed 5. We lower the remains of the walls and the glass and add the chicken broth. We program 10 minutes, spoon speed, varoma temperature. We check that both the potato and the carrot are to our cooking taste and if not, we cook a little more. [B]
Add the soybeans and the spinach leaves and [/ b] 1 minute, spoon speed, temperature 90º.
We serve in a tureen or individual bowls the noodles at the bottom and the soup on top.

Notes

The proportion of broth and pasta depends a little on each one, so you can calculate it according to your tastes and serve yourself more broth or more pasta. In general, Asian soups have more pasta than the ones we usually eat in Spain.
