Lyonnaise with tuna

Surely many of you have already seen how easy it is to make Lyonnaise with Thermomix®. The choux pastry it is the simplest; butter, flour and egg. We usually consume them with a sweet filling well be it pastry cream, cream or truffle. But this time we are going to fill them in one salty cream to serve us as an aperitif.

This is another of the recipes that we can take into account when organizing our menu for christmas. As simple as preparing the lionesses the week before, freezing them and the night before dinner you let them defrost. They are filled with the tuna cream and ready to succeed!

We can offer them to our guests accompanied by others snacks, nuts, pickles ...

Hello Mayra, I have seen this recipe and it looks very good at the same time that it has to be very tasty, but I have a duca, see if you can tell me what it is crème frâiche and where I could find it or if it can be substituted for something else. Thank you very much, I am always aware of your recipes. A hug.

      Hello Angels,

First of all, thank you for your comment and for following us!

Crème fraîche is a cream, similar to cream, but fresh. With a percentage of fat between 30 and 40%. You will find it in almost any supermarket, between creams and butters.

Anyway, you can always substitute the same amount of cream.

      Kisses!!

Hello Mayra, this recipe seems ideal and super fast, as I like them, but I have the same doubt as Angeles, to see if you can help us both. Thank you very much for sharing this recipe.

    Hi Esther:

HELLO MAYRA I LOVE YOUR RECIPE BUT I WOULD NEED TO KNOW WHAT AMOUNT OF FENNEL SEEDS IT TAKES BECAUSE IT DOES NOT APPEAR IN THE ENGINE, BUT IN THE PREPARATION THANKS

    1.    Mayra Fernandez Joglar said

      Hello Yeya:

I just modified the recipe. The truth is that the original recipe used fennel seeds, but when I made the lionesses, some I filled them with seeds and others with the same paste but without seeds, and those without seeds triumphed. So, unless you are a fan of fennel, you better not put them.

      Kisses!

Hello Mayra, I would like you to get me out of doubt,
Is the pastry flour normal, biscuit flour, or what?
is that in Mercadona there are so many different types of flour ...

    1.    Mayra Fernandez Joglar said

      Hi Fany,

the pastry flour of the Hacendado brand (that of Mercadona) is the one that puts wheat flour.

      Kisses!!

Can they be frozen with the filling or do you have to make the filling the same day you are going to eat them? All the best.
