This oatmeal soup is one of those humble and austere dishes so typical of Lent and Easter that can be prepared at any other time of the year.

This soup also has another advantage; simplicity. I'm not just talking about how fast and easy it is to do it, I also mean that its ingredients are very basic and you sure have them in your pantry.

It is also very comforting, not only because it is a soup, but also because oatmeal is very digestive and favors the ability to relax.

Ingredients

  • 100 g onion
  • 30 g olive oil
  • 700 g of vegetable broth
  • 80 g of gluten-free rolled oats
  • 1 tablespoon (brown size) oregano
  • 1 tablespoon (soup size) cashew butter (see recipe)

Preparation

  1. We put the peeled and chopped onion in the glass. We bite it during 3 seconds, speed 5. We lower the pieces towards the blades.

  2. We pour the oil and poach during 5 minutes, 120º, speed 1.

  3. After the time, we add the vegetable broth and heat it for 10 minutes, 100º, speed 1.

  4. Add the oat flakes and cook them for during 10 minutes, 100º, speed 1.

  5. At the end of the time, add the oregano and cashew butter, stir during 15 seconds, speed 3, left turn.

  6. When serving, we can decorate it with a drizzle of extra virgin olive oil and some nuts or seeds such as sesame or pipes.

Notes

You can substitute cashew butter for any other nut butter, for vegan cream or even for cooking cream. Check the options suitable for your diet.

As I mentioned before, their ingredients are very basic and easy to find in any supermarket. In addition, oatmeal is preserved for a long time in the pantry and is used to make endless recipes

This recipe is suitable for vegans, vegetarians, celiacs and gluten, egg and lactose intolerant.

Cashew butter can be substituted for a vegan cream or normal cooking cream But remember that if you use this option, it will no longer be suitable for vegans, ovo-vegetarians and lactose intolerant.

Obviously it is not necessary for oats to be gluten free if you do not have one special diet at home.

When decorating it, do not hesitate to add your favorite topping. They can be seeds, pumpkin or sunflower seeds, nutritional yeast or any crunchy nuts.

This soup is better take it freshly made because it has a much finer texture. However, as it cools, it takes on more body and remains as if it were porridge.

Although I prefer to take it freshly made, you can keep up to 5 days in the fridge without any problem. Just be sure to heat it up and stir it well for a delicious finish.
