Refreshing mint cucumber cream

I have thought that, as we are already in summerYou will be interested in some quick and easy recipe to make like this refreshing cucumber and mint cream.

The recipe is made for one person. Thinking especially of the Singles although it also serves to make the menu compatible when you live with food intolerance. It serves me, for example, to replace it with White garlicI love it and in summer I do it a lot but my husband is allergic to nuts, so we have to look for alternatives.

Ingredients

• 2 medium morning Spanish cucumbers
• 50 g of skimmed natural yogurt
• The leaves of 1 sprig of mint
• 1 dash of lemon juice
• 10 g of virgin olive oil
• Salt and pepper

Preparation

1. We wash and dry the mint leaves and cucumbers. We trim them and, with a vegetable peeler, cut 4 thin slices that we will reserve.

2. Peel the rest of the cucumbers and remove the inner seeds. We chop them and put them in the glass along with the rest of the ingredients. We crush during 1 minute, speed 10.

3. We slightly fold the cucumber slices that we had reserved and prick them with a skewer stick. We serve the cream in a tall glass and decorate it with the skewer we just made. We finish by sprinkling a little freshly ground pepper.
