Today it's time to prepare a recipe so classical and Spanish potato omlette, so easy to do and Mayonnaise y healthy like any vegetable cream. This is the artichoke and pepper coca.

Although we are in December, this recipe has nothing to do with the Christmas holidays. But, oddly enough, it is the best time to prepare it because we will find in the market the artichokes at a very good price.

Due to its ingredients, the recipe is totally suitable for vegans and vegetarians. It is also a good option for children eat vegetables and greens, we all know that these "pizza" type preparations drive you crazy.

It is clear that in the filling we can put the ingredients that we like the most but do not stop trying this combination with artichokes because I am sure you are going to love it.

Artichoke and pepper coca is a typical recipe of Mediterranean cuisine. A tasty and appetizing way to eat greens and vegetables.

Ingredients

For the mass:

  • 160 g of bread flour
  • 75 g olive oil
  • 70 g of mineral water
  • 10 g of pressed yeast

For the filling:

  • 1 red pepper
  • 1 green pepper
  • 1 artichoke
  • 1 cebolla
  • Olive oil
  • Salt and pepper

Preparation

  1. Put the mineral water and oil in the glass, heat for 2 minutes, 37º, speed 1. Add the pressed yeast and mix for 5 seconds, speed 5.

  2. Open the glass and add the flour around the blade. Mix for 10 seconds, speed 5. And knead during 5 minutes, closed cup, spike speed. During mixing, check that the mixture has turned into a ball and that it separates well from the walls of the glass. Otherwise, 1 more tablespoon of flour can be added through the nozzle.

  3. Remove and reserve the dough covered, with a damp cloth, for 45 minutes.

  4. Before the rest time is over, we can start with the rest of the preparation. The first thing to do is preheat the oven to 180º.

  5. Wash and cut the peppers into cubes. Cut the onion into feathers. Remove the outer leaves of the artichoke until it reaches the heart, which will already be softer. Cut the ends and split it in half. Remove the central hay and cut each half into 4 pieces.

  6. Spread the dough on a baking sheet. It can be done with your fingers because it is very soft and works well. Place all the vegetables on top. Season to taste and drizzle with a drizzle of virgin olive oil.

  7. Place in the medium oven height and bake for 25 to 30 minutes, until the edges are golden brown and the vegetables are rendered.

  8. Remove and warm for a few minutes before cutting into portions and serving.
