Artichokes with dried tomato vinaigrette

Have you seen in the market how good the artichokes? They are beautiful and I am not surprised because now is their season and their best time. I bought a kilo and I am going to make my artichokes with dried tomato vinaigrette… are you up for it?

The recipe is very simple, it is even suitable for beginners. You just have to clean the artichokes, cook them with the Thermomix and prepare a vinaigrette that is done in a minute. And in this way we will have a vegetable dish, healthy, simple and totally suitable for vegan and intolerant gluten, egg and milk.

For now, this recipe for artichokes with dried tomato vinaigrette I have only prepared with fresh artichokes. I have not tried to make it with canned artichokes but they sure come out just as rich. We must get used to using the season products like our grandparents did. When there were artichokes, they made artichokes and when there were squash, squash is made. So we let our gardens rotate and it is good, not only for our diet, which is more varied, but also for the land.

This recipe can be made in advance. It lasts a couple of days in the fridge and serves us both as an aperitif, as a garnish or as a first course in a light dinner.

      Hello Manu:
      All the recipes of the TM31 can be made with the TM5. Follow the steps as they are and it will be perfect.

    One question, doesn't the butterfly retreat after cooking the artichokes? Do we leave it during the whole process?

      The butterfly is only used while the artichokes are cooking. It should be removed in step 3 when drained.
