The other day in a restaurant I had a delicious risotto with mushrooms and bacon. As soon as I got home I got to work. East mushroom risotto is very similar to boletus risotto but with the touch of bacon strips.

The result is a creamy rice with a mild flavor and different textures. Highly recommended for rice lovers.

We all know that risotto is one of those favorite dishes of many and that is carried out by rice. Without a doubt, its creaminess will make even the most exclusive palate delight in it. Of course, for this, we need to make one more than perfect. Yes, it is true that we all have in mind that it is a complicated dish to prepare. Perhaps you could say that it takes a little time, but patience is a great virtue.

If you are thinking of preparing a easy mushroom risotto, you can always use a basic recipe, without complications. So the risotto has to have a broth base that will be one of the basic essences for a round dish. The broth is always preferable to make it homemade and for this we can use one of vegetables or chicken. We will have to add it little by little so that the rice is left with that very creamy touch.

Finally, in addition to the mushrooms or mushrooms that we will add, we have to finish the dish with a little butter and Parmesan cheese. Remember also that these types of dishes are made with a special rice called arborio. Of course, if you find him, you can always use the so-called bomba rice. Why? Well, because it is a coarser grain that is usually more absorbent.

So if we want a juicy result, it is always better to use this type of rice. What we do not recommend is long grain rice, because it can pass us and spoil our plate. If you want to surprise your guests with a perfect meal, go ahead and prepare the mushroom and prawn risotto. You can do it in a simple way. Are you wondering how? Well, you need some mushrooms that you can even have in the freezer for a rush like this. Also the prawns and a liter of fish broth. If you don't have the latter, you can always prepare it with a stock cube and a liter of water. Write down how it's done!

  • First we grate 50 grams. of Parmesan cheese, programming 10 seconds in progressive speed from 5 to 10.
  • We wash the glass and now we put 200 grams of onion. Just 4 seconds at speed 4.
  • We add 100 gr of mushrooms and also, 30 g of olive oil. We fry them by programming about 8 minutes at speed 1.
  • Now we add the rice and we program 3 minutes. Bucket speed and left turn.
  • Add the white wine and program 5 minutes.
  • Now it is the turn of the broth, always very hot and a little salt. We program about 12 minutes at a temperature of 100º.
  • With only four minutes to go, it's time to incorporate the prawns.
  • Finally, we remove the rice, sprinkle both the butter and the grated cheese and eat.

For this new recipe, we changed only one ingredient. So we will have a delicious mushroom and ham risotto. In this case, the issue of salt must be taken into account, since the ham takes a lot. We can go testing if necessary.

  • We add 50 grams of onion and 25 grams of butter, for 3 seconds, speed 5.
  • Sauté it for 2 minutes, speed 1.
  • Now we are going to add both the 100 gr of diced ham and the 150 gr of mushrooms, but that they are already cooked. Sauté for a minute, varoma speed 1.
  • By adding the white wine, again we leave it for a minute, speed 1.
  • Add the rice at 100º, spoon speed, turn to the left, for a minute.
  • Now it is the turn of the very hot broth. For 15 minutes, 100º and spoon speed.

Risotto with foie and mushrooms

In this case, we are going to create a more than original recipe, with a soft and exquisite touch. We will add 120 gr of foie and you will see the change of the dish.

  • We put the oil, onion and garlic in the glass at speed 4 for 10 seconds.
  • You have to sauté it for 10 minutes, 100º, speed 1.
  • Now we can add both the rice, the mushrooms, the foie and, of course, the broth. You can also add a little salt. We program 18 minutes at 100º, spoon speed and turn to the left.
  • After that, we check that the rice is ready and if it is not, you can always leave it for a couple more minutes. We take it out and sprinkle the parmesan cheese. To lick your fingers!

Spinach and mushroom risotto

Do you know all the benefits of spinach?. They have Vitamins A, C, K and E, as well as folic acid. Without a doubt, they become one of the healthiest dishes. Of course, since not everyone likes them too much, we can always integrate them into a plate of spinach and mushroom risotto. What do you think about the idea?.

  • First we will put in the glass, 4 cloves of garlic. Only 4 seconds in speed 5. If the walls of the glass are decorated with them, help yourself with a spatula to lower them.
  • We add the oil and we have to fry it for 5 minutes. Varoma, speed 1.
  • Now it is the turn of the mushrooms that we will sauté for about 3 minutes. Varoma, speed 1, left turn.
  • We need to add 250 gr of fresh spinach. Also 3 minutes, with speed 1 and turn left. Just like mushrooms.
  • You can add a little paprika, just a pinch and add the rice. We program 2 minutes, 100º, left turn and spoon speed.
  • Finally, to finish the dish, add the broth or water in this case, and cook for 13 minutes, turning to the left, spoon speed and 100º.

    This recipe is one of my favorites .. but the thermomix always sticks and burns the base .. it costs me a lot to clean it even with the nanax .. someone else happens to him?

      Hello Elisabet, try to use 40 g of oil instead of 30g and in steps 6 and 7 when you add the liquids, stir very well with the spatula so that nothing sticks to the bottom before cooking the rice with the wine and with the broth.       Hello Pablo, you can buy them already frozen and you usually get thistle mushrooms, shiitake, boletus edulis ... or buy them fresh, although now it is not the season. You also have them in canning jars, you can drain them very well and they will work perfectly. Or even buy them dry and you will only have to hydrate them and drain the excess water.

      About bacon I really like smoked but it is not a fundamental point in the recipe, you can use either of the two. Thanks to you for writing us!

    Hello, I have made this recipe that I really wanted, with a delicious taste but it has been super past (a cake) I have used arboreal rice and it says in the package of 15 to 18 'and of course since the rice is put there are 23.
