Basic recipe: garlic paste

One of the things I like the most about Thermomix are the basic recipes, like this one with garlic paste, which help me a lot in the kitchen.

Since I was little I have seen how my mother used garlic to cook And although, I do not prepare his recipes because of the comparisons, there are certain ways of cooking that he has instilled in me.

So in my house it is cooked with garlic ... with a lot of garlic. The only drawback is the repetitiveness of the task ... every day the same, crush the garlic, peel it and collect the skins. It is not a heavy task but what need is there to do the same task every day? The solution is, neither more nor less, than to prepare this basic garlic paste recipe and focus on what really matters: cooking.

I'm not going to talk to you about antibiotic properties which has garlic. Nor that it is a natural antioxidant that strengthens the immune system.

What I will tell you about is that it is one of the basic ingredients of our gastronomy. What would our sauces be without a clove of garlic or Castilian soup? The truth is that it would not be the same.

I am convinced that this garlic paste will be very useful for organize yourself in the kitchen. The process is very simple, perhaps what takes you the most time will be peel the garlic but even for this task we can use the Thermomix.

Another of the things I like garlic paste for is because like this my garlic does not spoil. This way I make sure that the garlic is firm and with all its properties intact.

This garlic paste lasts up to 2 weeks in the fridge and, to use it, you just have to open the lid, remove the transparent film and use. It is so easy and comfortable that it will soon become one of your essentials.

Make sure that the utensils you use to remove the pasta are clean and make sure that the pasta is always covered with a thin layer of oil.

As well can be frozen but you can't put the whole jar in the freezer because it becomes blocked and afterwards it is very difficult to use it.

If you freeze it, you'll have to do it in small portions. You can use an ice bucket, although what I would do is put small piles on a tray and, once frozen, put them in a zip-lock bag.

When using it I use a very simple equivalency. For me, a coffee spoon equals one garlic clove. As simple as that!!

And if you want to give a different touch to your garlic paste you can prepare it with ginger. The flavor is much more powerful although, depending on the recipe, it will go very well.
