Broccoli and tapenade salad

How you can tell that it is already summer !!. The temperatures are high and at home we do not prepare anything other than fresh and quick recipes like this broccoli tapenade salad.

The truth is that of taking advantage of the cooking of the glass to prepare some vegetables in the VAROMA It is something that I love about Thermomix. So I usually use it saving time and energy. On this occasion the eggs and broccoli will be cooked at the same time with what we will have a rich salad in less than 20 minutes.

Today we are going to dress this salad with a tapenade vinaigrette. This pâté made with black olives is delicious on simple toasts but best of all, it serves as an accompaniment to others recipes or salads ... do you dare?

Simple broccoli and tapenade salad made in the Varoma and ready in less than 20 minutes. It is accompanied by arugula, boiled eggs and Parmesan cheese.

Ingredients

• 2 eggs
• 250 broccoli
• 30 g olive oil
• 10g vinegar
• 2 teaspoons (for dessert) tapenade
• 50 g arugula
• 10 black olives
• Parmesan cheese shavings
• Salt and pepper

Preparation

1. In a bowl mix the vinegar, oil and tapenade.

2. Wash the broccoli well and cut it into small florets. Put them in the Varoma.

3. Fill the glass with water up to the 1 liter mark. Put the basket inside with the eggs. Put the lid and the Varoma in position. Program 15 minutes, 100º, speed 2.

4. While washing and draining the arugula well.

5. After time, cool the broccoli and drain well. Also refresh the eggs and peel them.

6. To assemble the plate we will first place the arugula. Then the broccoli florets, the quartered eggs and the chopped or whole olives. Season with salt and pepper and season with the tapenade. We finish by crowning with a few shavings of Parmesan.

Notes

If you like rawer vegetables at home, you can remove the Varoma before the time runs out.[br][br]You can take the opportunity to cook more eggs and prepare a recipe for deviled eggs.
