If I had to say which is the jewel in the crown of the Spanish cuisine I would have it really difficult. There are many ingredients that are produced in our country and that, due to their high quality, are recognized throughout the world.

Without a doubt, one of them is the Serrano ham. So ours, so versatile and with so much flavor that it is essential in many recipes as, for example, in the chicken and serrano ham rolls that we propose today.

They are simple and quick to do. And what I like the most is the contrast between the soft meat of the chicken and the crunchy and salty flavor of the fried serrano ham.

Ingredients

  • 270 g of clean chicken (without skin or bones)
  • 1 egg
  • 20 g of grated cheese
  • 15 g of breadcrumbs
  • 85 g cheese spread
  • 1 tablespoon chopped parsley
  • 12 thin slices of Serrano ham
  • Salt and pepper
  • Frying oil

Preparation

  1. Chop the chicken and put it in the glass. Add the egg, the two types of cheese, the breadcrumbs and the parsley. Add salt and pepper but taking into account that the ham will also add salt to the preparation.

  2. Chop during 10 seconds, speed 7. Put the mixture in a pastry bag with a wide nozzle, as for making croquettes.

  3. Spread the slices of Serrano ham on the work table. Put a strip of the chicken mixture on one of the short ends. Raise the edge a little and roll it up. Repeat until finished with the filling and with the slices.

  4. Fry in plenty of oil until the ham is golden and crisp. Remove them and let them drain on kitchen paper to avoid excess fat.

  5. At the time of serving they can be taken fresh or cold as if it were an aperitif. They can even be cut into small pieces for a cocktail party or birthday.

Notes

Place the strip with the chicken mixture on the less attractive side of the slice, so that it will remain inside the roll and will not be visible.[br][br]Care must be taken to ensure that the filling does not come out over the edges. since they are prettier.[br][br]Once rolled, place them with the end of the slice facing down. This way the weight of the roll itself will prevent it from opening.
