You already know that the Tempura is a quick fry that can be used with vegetables and seafood. Today's tempura is a bit special because we have flavored it with coco. An ingredient that goes perfectly with prawns.

In this original recipe, coconut plays a great role in giving tempura a very special flavor.

Ingredients

  • 12 prawns
  • 100 g flour
  • 100 g of iced coconut water
  • 1 egg yolk
  • 1 tablespoon (soup) of grated coconut
  • Salt and pepper
  • Frying oil

Preparation

  1. We start by removing the head and peeling the prawns, ensuring that the tail remains intact. Season generously.

  2. We put the butterfly on the blades. We add the yolk and the frozen coconut water to the glass, program 10 seconds, speed 3.

  3. We program 1 minute, speed 2 and we are pouring the flour into the spoon by the spoonful.

  4. At the end of the time, we remove the butterfly and, if necessary, we finish mixing with the spatula to incorporate the flour that has remained on the walls of the glass. We reserve the mixture in a bowl.

  5. We put the oil to heat and when it is ready, we take the prawns one by one by the tail and submerge them in the flour mixture. Shake lightly so that the excess dough falls, sprinkle a little coconut and fry.

  6. It is interesting not to fry many at the same time because that way they are easier to control. We remove them when they have a slight golden color.

  7. We put them in a large colander while we finish frying the rest.

  8. Arrange them on a plate or flat platter and serve immediately.

      I usually buy coconut water at Mercadona. It's a bit hidden but you'll find it on the soft drink shelf.
