Couscous with vegetables and chickpeas

This couscous with vegetables and chickpeas can be present in various ways that we will use according to the occasion and especially the time that we have.

For the first presentation we can choose the classic crown. To do this, we only have to fill a greased mold with the couscous, press it well and unmold it on the plate or serving dish. In the center we place the vegetables and chickpeas and finish by sprinkling a little chopped coriander or mint.

The second presentation is similar to the crown but the presentation is of individual way. To do this we will have to spread a little oil or butter on a plating ring. Fill it with the couscous, squeeze a little to make it firm. Remove the ring and decorate with the vegetables and chickpeas. As in the previous version we end up sprinkling coriander or mint.

The third option is the most basic. It would be about mixing the couscous with the vegetables and well-drained chickpeas as if it were a rice salad. This is the version that we use the most at home because of the rush but with any of the presentations the flavor is the same.

Ingredients

• 125 g of semolina for couscous
• 100 g of cooked chickpeas
• 85 g of zucchini
• 30 g carrot
• 60 g onion
• 45 g leek
• 15 g oil
• 100 g of vegetable broth

Preparation

1. Prepare the couscous according to the manufacturer's instructions.

2. Peel and wash the carrot and leek. Put them in pieces in the glass and chop by programming 3 seconds, speed 5. Remove and reserve.

3. Without washing the glass, put the peeled and chopped onion. Chop it during 4 seconds, speed 5. Lower the pieces onto the blades, add the oil and sauté for 5 minutes, 100º, speed 1.

4. After time, add the leek and carrot that we had reserved. Program 5 minutes, 100º, speed 1.

5. Add the zucchini and cooked chickpeas. Program 1 minute, 100º, speed 1. Pour the broth and cook everything together for 5 minutes, 100º, speed 1.

6. Remove from the glass and serve with the couscous, using any of the proposals that I have mentioned in the introduction.
