I don't know what problems M.Carmen will have with the egg yolk, but the eggs in this type of recipes are put whole, it can be done only with the white, yes, but it is not the same. Like substituting bran or oatmeal for breadcrumbs, if it is a problem of intolerances to wheat gemer, there are bran and oatmeal breads to use, dry and make breadcrumbs, for other reasons, I don't think the recipes should be altered on a whim, then they are not the originals.

I just did them and we didn't like them. The eggplant is barely noticeable, it tastes a lot like bread and when baked they come out very dry.
I am going to make them again but changing the quantity of the ingredients, I am going to add more eggplant and less bread.
And possibly fry them instead of the oven, with little oil
