Eggplant balls

Today's is a recipe for use that is surprising for its simplicity and taste. We will use eggplant, parmesan, egg and a piece of bread from a couple of days ago.

      For those of you who have problems with eggs, I don't know if you know that it can be substituted for shredded flax soaked in water. You can see the recipe for zucchini pancakes without egg. It works very well with linen.

    Hello Ascen. Thanks for the recipe, I make them exactly the same as in your recipe, but someone from TX or MC passed it to me, I don't remember, but they are great. I don't know what problems M.Carmen will have with the egg yolk, but the eggs in this type of recipes are put whole, it can be done only with the white, yes, but it is not the same. Like substituting bran or oatmeal for breadcrumbs, if it is a problem of intolerances to wheat gemer, there are bran and oatmeal breads to use, dry and make breadcrumbs, for other reasons, I don't think the recipes should be altered on a whim, then they are not the originals.

    I just did them and we didn't like them. The eggplant is barely noticeable, it tastes a lot like bread and when baked they come out very dry.
    I am going to make them again but changing the quantity of the ingredients, I am going to add more eggplant and less bread.
    And possibly fry them instead of the oven, with little oil
    Let's see how they come out ...
