Brandade cream glasses

Since I saw these little glasses of brandade cream I have not been able to get them out of my head. I thought it was a great idea to serve them in containers single and that each diner can enjoy its flavor.

Surely you have already discovered how easy it is to make a cod brandade with our Thermomix. But today we are going to go a little further by making it even more mellow thanks to the cooked potato. The result is halfway between a pate and a puree, that is, a velvety texture and with a lot of flavor.

The piquillo peppers they play an important role in adding color to our recipe. I find it fantastic when its juice seeps through the cream and the flavors blend.

This recipe can be made in advance and leave the brandade cream glasses closed in the fridge until serving time. I love accompanying them from crispy bread sticks, forming a perfect combination of texture and flavor.

    I think it is a very good idea and I only put a but. When beating the gum potato, wouldn't it be better to use a potato press or masher? I love thermomix although the recipe does not necessarily have to be done completely if there are alternative methods that improve the final result.

      I usually use the cod crumbs that are already desalted. They are very comfortable for me but you have to take into account the point of salt.

      Hello Santiago, you don't have to warm them up. Take them out of the fridge in advance and serve them at room temperature.

      It can be done in advance and left in the fridge.

      I don't know if the texture and flavor will be the same when defrosted because it contains potato. Why not try the recipe from the Essential book? That one doesn't have potato in it and I know it defrosts well. You can also use the same presentation.

    Could you use all the olive oil? For example, the Arbequina variety, which is mild. Sunflower oil just doesn't work well for me.
