Gluten-free coconut and rum sponge cake

gluten-free-coconut-and-rum-cakethermorecetas

With the return to work, at home we regain the habit of preparing biscuits for breakfast. We started with a gluten-free coconut and rum sponge cake.

Yes, you like the coco you can't stop trying our other recipes. You already know that in Thermorecetas We are in love with this ingredient. It is so delicious that it deserves a new recipe.

This cake, in particular, is very soft and juicy. It is made with a mixture of gluten-free flours. In the market there are several brands that sell it already prepared.

To give the dough air, I have used the old trick of whipping the whites until stiff, even though the sponge cake gluten-free of coconut and rum do not rise, that is, do not pompadour but nothing will happen because a perfect crumb will form.

To flavor it, I have used a dark rum that is a cane sugar distillate and is gluten-free. This way we make sure that anyone with celiac diseaseHowever sensitive it may be, you can take it safely.

Mayra Fernández Joglar sorry, I didn't want to bother you, I just didn't see it clearly, thank you

If it doesn't bother me! The fact is that, although I am clear about what the yolks and whites are, when I write I always get confused. And although I read and reread the entries, my brain does not find the errors! That is why I said that I am human !! 😉

What mix of gluten-free flours? Not all react the same

    1.    Mayra Fernandez Joglar said

The one I have used is from Mix Dolci de Schär. It has starch and corn flour and carob seed flour. Easy to find on large surfaces.

    2.    Maricarmen Martin Campos said

Thanks. The result is not the same if you change the flour.

Can it be made with Beiker flour?

    1.    Mayra Fernandez Joglar said

Hello Luz: I know the brand but I have not cooked with it. The one I have used contains starch and corn flour and carob seed flour, it may help you to compare it with yours.
