With these toasts of goat cheese and tomatoes with pesto you can prepare a dinner full of flavor, original and very fast. A true Mediterranean pleasure in just 15 minutes.

Crusty bread, soft goat cheese cream, sweet tomatoes and all washed down with a aromatic pesto with basil and olive oil… Will there be a better plan?

These toasts you can use as an aperitif or to prepare light dinners. Serve them with a cold soup first and you will have a simple and balanced summer dinner.

The truth is that tostas are great as appetizers because they are easy to do and there are infinite combinations.

These in particular has all the good of the Mediterranean diet and with products full of flavor that are easy to find in any supermarket.

As I have already mentioned, they are also great to prepare a simple dinner. It is best to first serve a cold soup or cream that does not have tomato to make it more varied.

To make them you can use the bread that you like the most. Mine is a gluten-free buckwheat bread that has that cereal flavor that we like so much and that is also suitable for celiacs and intolerant.

The toasts have to be done at the moment so that the bread is crunchy but, if you don't have time, it is best to make the pesto and cream cheese in advance. So you just have to toast the bread and assemble them.
