Black garlic hummus, with truffle oil and lemon-lime pearls

Simply spectacular and delicious. Come in to surprise this Christmas! I am a great lover of hummus, especially the traditional one, but there are other very interesting versions as well as the pea hummus (for my taste one of the best) or the lentil hummus. If you like hummus, I recommend that you visit all of the ones we have because you will find really interesting and surprising options.

But in this case I have based myself on the recipe of Hummus chickpea traditional and we have combined the precious black garlic and an exquisite touch of black truffle oil. And we have complemented it with some lemon lime pearls to make it more original and colorful. In addition, in the mouth, the contrast of textures between the hummus and the pearls is very interesting, which literally explode in your mouth. Now at Christmas time in supermarkets or more specialized stores of gourmet products you can find these products, mine are fishing. If you want to do without the pearls, you can add the juice of 1/2 lemon directly to the hummus cream and that's it.

About the black garlic its producers explain that it is obtained by fermenting raw garlic with seawater for between 60 and 90 days. Surprisingly, its smell and taste have nothing to do with raw garlic, on the contrary, its texture is soft and tender and its smell is very pleasant, being its taste similar to that of candied blackberry. Its properties are very beneficial for diabetes, hypertension, hyperlipidaemia and cancer prevention. I recommend you try it, it will surprise you, I really tell you. Nowadays you can already buy it in almost any store (in Lidl they always have it), especially in the local neighborhood markets.

And finally, you can prepare this hummus in advance and assemble it at the last minute.

    I love your recipes, but the question about this is ... where do I get the lemon pearls, there are few supers, so that's my question, because I can't and I don't have what it takes to make them.

    Does truffle oil have to be white truffle or black truffle? Which one have you used exactly?

      Hi Mavi, the oil is black truffle (but it can be white if that's what you have), we just want to give it a little touch. I have the La Chinata brand, bought at the Corte Inglés (gourmet club) but it can be any other. It is a product that, compared to normal olive oil, is expensive. But it is used in such a small amount each time (it is very powerful in flavor) that you will get a lot out of it. I have the bottle almost full and they gave it to me 1 year ago. I use it for risottos, tortillas, hummus ... always a teaspoon or something like that, it's very powerful! You will tell me 🙂
