Lemon sponge cake with poppy seeds

I think there is no better way to start a Monday than with a lemon poppyseed sponge cake. Especially if it is home and it has all the flavor of good things.

This recipe does not have many complications although it is important that the mould be well prepared so that the cake does not break when we are going to unmold it.

It is interesting that each one knows how their molds work. In my case there is a bit of everything; I have an elongated one that you always have to put greased baking paper on it because there is no way to unmold a cake without it sticking. However, the one I have used today just by greasing it is enough.

The funny thing about it is that they are both from the same brand, bought at the same time. The only difference is that one is a few inches longer than the other. When in doubt, I recommend that you line your mold with greased greaseproof paper. For this type of mold it is fantastic.

All the poppy seeds they are easy to find in health food stores or organic food stores. Or at the market stalls where spices are sold. They will serve to give a slightly crunchy texture to our lemon sponge cake.

      Hello Mercedes:

      You can perfectly make the cake without poppy seeds. The issue with flax seeds is that when they are combined with liquids, they form a gelatinous gel that comes in handy to make some recipes but I haven't tried it in this cake.

      If you dare to make them with flax seeds, tell us the result, okay?

        I have made the cake, but with some changes, depending on what I had at home, Hehe. It has been very good.
        Basically I have made the typical yogurt measures (1 yogurt, 1 oil, 2 sugar and 3 flour), 3 eggs, and I have added 200 grams of mandarin segments, which were frozen, crushing them at the beginning.
        I have also added the flax seeds, about 15 grams, but at the end.
        The result has been very good.

      Hello Maria Jose:

      Muscovado sugar can be found in the international part of large stores.

      There are several types but if you can't find them, you can substitute it for whole cane sugar (in health food stores and organic food stores) or for white sugar.

    I have made the cake as you have it in the recipe, although the sugar I have set normal because the muscovado did not know what it was (I have already read it in the comments).
