As you take them out of the house they will ask you for the recipe for sure. They are buns with a intense lemon flavor that surprise those who try them.

We will achieve the lemon flavor by injecting into each piece a syrup -which in our Thermomix is ​​prepared in 3 minutes-, using a syringe. If you don't have a pastry syringe, you can use one of the pharmacy syringes.

With the arrival of summer it seems that you want to taste the refreshing taste of this citrus. With Thermomix it is easy to get it in savory dishes such as lemon rice for garnish, in drinks (Lemonade) or in sweets as original as today.

Ingredients

For the buns:

  • 150 g of sugar
  • The skin of 1 lemon from organic farming (only the yellow part, without the white part)
  • 2 eggs
  • 80 g whole milk
  • 80 g of sunflower oil
  • 150 g of pastry flour
  • 1/2 envelope of yeast type Royal (8 g)

For the syrup:

  • 20 g of sugar
  • 70 g of lemon juice (the juice of 1 or 2 lemons, depending on the size and juice they have)

Preparation

  1. We turn on the oven at 180º.

  2. We put in the glass 150 g of sugar and the lemon peel (only the yellow part) that we will have previously washed and dried. We program 10 seconds, speed 8.

  3. Now we add the eggs, milk, oil, flour and yeast. We program 20 seconds, speed 4.

  4. We put the mixture in paper molds (of round, rectangular muffins ... those that you prefer) filling them only halfway.

  5. Bake at 180º for 15 minutes.

  6. When they are ready we take them out of the oven and prepare the syrup.

  7. We put the sugar in the glass and pulverize it by programming 5 seconds, speed 8. Add the lemon juice and program 3 minutes, 90º, speed 2.

  8. We fill the syringe with part of this liquid and we puncture the buns, expelling the syrup so that it permeates its interior. We repeat the operation until we run out of liquid.
