Meatballs with ham and almond sauce

I can assure you without fear of being wrong that these are some of the most delicious meatballs I have had in a long time. They are really delicious! Veal meatballs with ham and almond sauce. Juicy, tasty, with a spectacular sauce, a unique and very special flavor. You really can't stop eating them !!

Today we are late and we have not had time to prepare anything with which to accompany them, but honestly, it has not been necessary. We had a delicious loaf of bread and not a crumb was left over! We have conveniently used it in dipping bread in the sauce which is so good that it has been a real vice.

But as an accompaniment we can perfectly use white rice or cooked or fried potatoes. Delicious too, no doubt. In case you feel like it, I leave you the recipe so you can cook a garnish white rice perfect.

Exquisite and juicy veal meatballs made with almond and ham sauce. Perfect accompanied with potatoes or rice.

Ingredients

Meatballs:

  • 1/2 kg of minced meat (beef)
  • 1 egg
  • 50 g bread crumbs
  • 1/2 glass of milk

Almond and ham sauce:

  • 1 small onion
  • 40 g of Serrano ham
  • 20 g almonds
  • 1 slice of fried bread
  • 150 g glass of cava or white wine
  • 250 g broth (or water with a pinch of concentrate)
  • flour (for coating)
  • olive oil (for frying)
  • 30 g of extra virgin olive oil (for the sauce)
  • salt (to taste, with caution that the ham is salted a lot)
  • pepper
  • a few strands of saffron

Preparation

  1. We put the bread crumbs and the milk in a bowl. We let it soak well and drain a little and reserve.

  2. We put the minced meat in a bowl. We break the egg and add it. Salt and pepper to taste and add the soaked breadcrumbs that we had reserved. Knead well until obtaining a uniform dough.

  3. Shape the meatballs with your hands, roll them in flour and fry them in a pan with plenty of hot oil. We reserved the meatballs.

  4. We put the fried bread, the almonds and the saffron threads in the glass. We shred 20 seconds, speed 7. We withdraw and reserve.

  5. Without washing the glass, add the onion and crush 5 seconds, speed 5. We lower the remains of the lid and walls. Add the ham and 30 g of oil after having fried the meatballs. We program 6 minutes, temperature 120, spoon speed.

  6. We add the wine or cava and program 3 minutes, varoma temperature, spoon speed, without beaker (to evaporate the alcohol).

  7. Now add the broth and the bread and almond mash and program 5 minutes, temperature 100º, speed 3 1/2.

  8. We add this sauce to a large pot with the meatballs and cover them. We cook them over low heat for 20 minutes, stirring vigorously from time to time so that the sauce binds.
