Monkfish in cider with Thermomix

You already know that we are always looking for healthy recipes, varied and balanced. Especially now that, who else and who less, is already thinking about the bikini operation and getting a bit in tune for the summer so let's learn how to prepare a delicious monkfish with cider.

Today's recipe will transport us directly to Asturian lands. It is made from snuff, a fish with a somewhat high price but with a delicious flavor. And we will accompany it with prawns and a sauce of apple and cider.

To prepare it we will use the VAROMA, which as you know, is magnificent for cooking rich steamed recipes.

Do not hesitate to prepare a garnish based on potatoes or rice to include in this recipe. This way we will have all the nutrients well proportioned.

Ingredients

  • 100 g onion
  • 10 g olive oil
  • 10 butter g
  • 2 slices of monkfish
  • 8 raw prawns
  • 50 g carrot
  • 50 g of zucchini
  • 1 pippin apple
  • juice of 1/2 lemon
  • 150 g of natural cider
  • 200 g of vegetable or fish broth
  • 30 g of cream
  • Salt and pepper

Preparation

  1. Peel the onion and put it in the glass with the oil and butter. Chop during 5 seconds at speed 5. Lower the chips onto the blades. Poach during 7 minutes, 100º, speed 1.

  2. While washing and chopping the carrot and zucchini. Reserve inside the basket.

  3. Peel the apple and chop it. Reserve in a bowl with cold water and the lemon juice so that it does not oxidize.

  4. Peel the prawns. Wash and dry the fish. Place a monkfish slice and four prawns on a square of aluminum foil. Put a few drops of oil on top and add salt and pepper. Close forming a well sealed package. Repeat the operation and reserve both in the Varoma.

  5. Once the onion is poached, add the cider and let it reduce 3 minutes, Varoma temperature, speed 1. Then add the drained apple, the broth and the cream. Place the basket inside. Close the lid and place the Varoma in position. Program 15 minutes, 100º, speed 3, left turn.

  6. After the time has elapsed, remove the basket from the inside. Close the glass and put the Varoma back in position. Program 10 minutes, Varoma temperature, speed 3.

  7. Once the process is finished, remove the Varoma and carefully open the packages. Mix the vegetables in the basket with the broth that we have in the glass so that they are juicy. Divide them on two plates forming a bed, place the fish and prawns on top. Serve right away.

    GOOD EVENING . WHAT A GOOD PAINT. COULD IT BE MADE WITH ANY KIND OF FISH (HAKE FOR EXEM) OR CAN IT ONLY BE WITH MONKFISH? THANK YOU

      Of course you can use hake. You can substitute it for any white fish, even for sole!
