It has few ingredients but do not be fooled because they are very healthy and nutritious. As we have already seen, dashi broth is prepared with seaweed and provides many nutrients. Tofu is mainly known for its high content of calcium and protein of vegetable origin. For its part, the mushroom strengthens the immune system and is very satiating and adds fiber to our diet.
But without a doubt what I like the most about this soup is that it contains miso. It is produced by fermenting soybeans with salt and the result is a paste that contains live enzymes that promote digestion and helps to repopulate the intestinal flora.
To make miso soup with mushrooms, tofu, and sesame seeds, I usually use genmai miso and shiro miso, both of which are quite mild.
