With this crazy life that we lead sometimes we forget that our body needs good nutrients to function. So I try not to skip any of the meals and even less the lunch or the snack. I usually carry a homemade cookie or a small snack in my bag to take it and be able to continue with day-to-day activities.

      Hello Pilar:
      Coconut oil does not have the same texture as olive oil, so it is not so easy to substitute it.
      I have not tried making these cookies with another oil, but if I had to, I would use less. I would start with 15 g and if I see that the mixture is very dry I would add another little but just enough and without overdoing it.
      I know the answer is not very specific but I hope it helps you.
