Omelette without egg

What do you think if we prepare an omelette without an egg? Surprising, right? It is my latest discovery and it is already part of our collection of favorite tortillas.

More than once I have told you that there are as many omelette recipes as there are families. And obviously vegan families or those allergic to eggs They also prepare it but in a special way. They simply substitute the egg for a mixture with chickpea flour.

You have to take certain things into account for it to come out a perfect omelette. So I recommend you read this entry in detail.

The first thing we have to bear in mind is that to do it well we cannot replace the chickpea flour for wheat flour. Chickpea is a legume and wheat a cereal. So they neither have the same nutrients nor do they work the same.

You can make the omelette with or without onion. We love it but you can skip it.

To fry the potatoes you can do it as you like. In our case, in order to subtract a few calories, we prepare them in the Thermomix glass. They are not fried like in a pan, they are rather well cooked but with all the flavor.

This mixture without egg must be cook it over low heat. As you have moderate or strong fire it will stick. It does not matter if the pan is well greased, it sticks without remedy. (Yes, it has happened to me several times that is why I am warning you).

I like small and chubby tortillas better but I admit that with this one it is better to make it in a bigger skillet. It worked out well for me on a 20cm.

Another of the strange things that you will see in the recipe is that it is used apple vinegar. It is not essential but this way you will ensure that the potato omelette really tastes like potato and not chickpea.

Turmeric is another ingredient that if we do not have it on hand we can avoid it but it helps the mixture without eggs have a nice yellow color. But be careful, if you use a lot of it, it can take a greenish-yellow color a bit strange.

And to finish, you have to keep in mind that with the amounts that I put you, it comes out a mixture without egg equivalent to 5 units. From here you can double or reduce the amount to prepare other delicious recipes.

      The omelette is as if it were a normal potato omelette. If it comes out soft, leave it a few more minutes in the pan.
