At home we take advantage of the weekend to bake delicious things like these tahini and orange cookies. We love to give ourselves little whims at snack time.

These cookies are made with Gluten-free, lactose-free, egg-free ingredients and are also vegan-friendly. And, although they are made with different flours, they are all very easy to find in supermarkets.

But without a doubt the star ingredient is tahini which gives it a special texture and very good nutritional properties.

Easy to make cookies that surprise for their flavor.

Orange tahini cookies

Ingredients

Dry ingredients

  • 85 g of rice flour
  • 30 g of oatmeal
  • 25 g cornstarch
  • 50 g whole sugar
  • 1 level tablespoon (dessert size) baking powder
  • 1/2 level tablespoon (dessert size) baking soda
  • 1 level tablespoon (dessert size) cinnamon
  • 1 level tablespoon (brown size) ground ginger
  • 1 pinch of salt

Wet ingredients

  • 80 g tahini
  • 50 g of vegetable drink
  • 10 g agave syrup
  • 20 g olive oil
  • Zest of 1 organic orange

To decorate

  • Sesame seeds

Preparation

  1. We put all the dry ingredients in the glass and aerate them during 10 seconds, speed 8. We withdraw and reserve.

  2. Without washing the glass, we put all the wet ingredients in the glass. We beat during 15 seconds, speed 2.

  3. Next we program 45 seconds, speed 2 1/2 and we are adding tablespoons of the flour mixture through the nozzle. At the end we will see that we have a well mixed and slightly oily dough.

  4. We form, with the dough, 12 balls of equal size and place them on the oven tray. We flatten them slightly and sprinkle the sesame seeds on top to decorate.

  5. We put the tray in the oven and bake between 15 and 17 minutes or until the cookies have a nice golden color and the edges begin to toast.

  6. We remove the tray from the oven and let it cool for a few minutes. Next we pass the cookies to a rack where we will let them cool completely.

I recommend using organic oranges to make this recipe. For this recipe you are only going to use the skin, so make sure it is free of toxic chemicals.

On the other hand, if you want to enhance the orange flavor you can add 2 drops of essence of orange or from orange blossom water that you will surely have in the pantry to make the Roscon de Reyes

La decoration is very basic in these cookies so don't stop using white, toasted, or black sesame so that they are simple but beautiful.

To preserve these orange tahini cookies it is best to put them in a airtight container. They last perfectly up to 7 days.
