By now we are sure that we all know how to prepare a vegetable papillote. It is a very simple and healthy recipe, where the vegetables are cooked steamed with its own juices, maintaining a large part of its vitamins and minerals.

Today's recipe can serve as Garrison or as first course. But the best thing is that it can be served with vinaigrettes or sauces that will add flavor. Here is my favorite selection:

Yogurt sauce: this sauce is a staple in my kitchen. Perfectly accompanies meats and vegetables.
Watercress and walnut pesto sauce: It is ideal for pasta but also for vegetables. The crunchiness of the walnuts will add texture to our papillote today.
Avocado aioli: A real joy for our vegetables. Garlic adds a bit of spice and the smooth texture of this sauce blends perfectly with steamed vegetables.
Mustard sauce: Another smooth, melting sauce with personality.
Romescu sauce: A classic of traditional cuisine that will serve us both for fish and for our vegetables.

Now that we have the sauces, we only need to decide with what ingredients we are going to make the vegetable papillote. I have opted for leek, carrot, green pepper and mushrooms but you can use whatever you want. You just have to have caution with garlic and tomato. The first because it can give too much flavor to the dish and the second because it releases too much water. The choice is in your hands!

    What a tasty and healthy recipe. But ... instead of using parchment paper or parchment paper, can you use aluminum foil to make the papillotes?

      Of course it can be used. In fact, if you use aluminum foil, it is much easier to close them, although the presentation on the table is not so good. So you decide: practicality vs presentation !!
