We go there with a plate of pasta with eggplant that we will finish cooking in the oven.

A simple first dish where there are any in which we include vegetables and mozzarella cheese. You can prepare it with long or short pasta, with the one you like the most.

Ingredients

  • 20 g oil
  • 100 g onion
  • A bunch of basil
  • 1 garlic clove
  • 350 g of aubergine
  • 250 g canned peeled tomato
  • Mozzarella

Preparation

  1. We wash and cut the aubergine into cubes and let it rest, with salt, on the varoma tray to release the water. So we will have it for about 1 hour. Then we wash it with tap water and dry it well with kitchen paper.

  2. Next we put the oil, the onion, the peeled garlic clove and the basil in the glass. We program 3 seconds, speed 7. Add the eggplant and program 4 minutes, 100º, left turn, spoon speed.

  3. Add the tomatoes (in the 250 g there will be tomato and broth or puree from the pot, we add it all) and program 18 minutes, 100º, left turn, spoon speed.

  4. We take advantage of that time to cook the pasta in a saucepan, following the manufacturer's instructions.

  5. We mix the pasta with the aubergine sofrito and put it all in a baking dish. We put a few pieces of mozzarella on the surface and grill for a few minutes.

  6. We serve immediately.
