This quick coca with four cheeses is a new version of the classic vegetable coca how much we like it at home. It is made with vegetables and a mixture of cheese that you can vary according to your tastes.

This type of recipe looks good do it with the indispensable and necessary ingredients that you make it and it's a good way to include vegetables without the little ones (and the older ones) noticing.

In this case we have dispensed with meat products so the whole protagonistsmo focuses on cheeses.

If you already have the mixture of cheeses prepared you can skip step 2 and go directly to prepare the vegetables.

Feel free to swap out the zucchini or bell pepper for another vegetables such as red pepper, carrot, or cauliflower. You can also add seasonal mushrooms or mushrooms.

Try to put those vegetables that are not so popular at home. In this recipe they will go completely unnoticed and so you get to include more variety in the diet.

You can also mix the cheeses prepare to your liking. I have used Manchego cheese, Parmesan, cheddar and mozzarella but feel free to use a blue cheese for a more powerful touch.

Serve the quick coca portions with the four cheeses with a good fresh leaf salad. It is, without a doubt, the perfect companion.

    Hello. Could you change the rice flour for another type? Wheat, oats, corn, maybe? Or is it something essential? It looks great, thanks for the recipe.

      Sure, sure ... for the one you have at home!
      I think it could even be made with quinoa or chickpea flour, but the coca would be much denser and more nutritious.
      Remember that there are some cereals that celiacs cannot take.
