Rice with zucchini

In today's video you will see how easy it is to prepare a creamy rice with zucchini. I like to serve it as a garnish, with meat or fish.

The good thing about this recipe is that we can adapt it to the ingredients we have at home. In this case we will add zucchini but we can replace it with green beans chopped, diced carrots, small florets of broccoli, pumpkin cubes...

Ingredients

  • 60 g of onion in pieces
  • 30 g of extra virgin olive oil
  • 320 g of rice
  • 100 g of white wine
  • 800 g hot vegetable broth
  • 1 teaspoon of salt
  • 400 g of zucchini, diced
  • Some fresh mint leaves

Preparation

  1. We put the onion in the glass and chop it by programming 5 seconds, speed 5. We lower what is left on the walls of the glass.

  2. We add the oil. We program 3 minutes, 120º, left turn, speed 1.

  3. We add the rice. We do not put the beaker and program 3 minutes, 120º, left turn, speed 1.

  4. We now incorporate the wine. Without putting the beaker we program 1 minutes, 100º, left turn, speed 1.

  5. Add the broth, salt and chopped zucchini. Mix well with the spatula, moving the ingredients that are in the bottom of the glass. We place the basket on the lid (without putting the cup). We program between 12 and 16 minutes (depending on the rice we use, what you put in the container), 100º, left turn, speed 1.

  6. At the end of the programmed time, we check if the rice is well done. If it is not, we only have to program one or two more minutes, same speed and temperature.

  7. Let the rice rest for two minutes in the glass.

  8. And now we have it, ready to serve with some fresh mint leaves.

Notes

It can be made with risotto rice or another variety, always taking into account the cooking time indicated by the manufacturer.
